Also don't understand what was happening with the guy they were cutting up on the table? Was he still alive cos Rick said let him turn, rather than kill him before they escaped? But all the others were hit with a baseball bat and then had their throats cut.

Roller he was referring to the guys running terminus turning, not the guy on the table.
Guy on table had a bullet wound to the forehead meaning he won't turn.

Didnt they say something about letting off explosives to keep zombies away from the camp or some such

I think that was them clearing out zomblies, hence why that guy was out with the canisters, a big herd was there.
