Paul Hollywood does piss me off tbh, but I love seeing all the cakes & stuff. Will probably have to make something to eat whilst watching it though...

Agree about Ruby sassythefirst i really don't think she's faking her lack of confidence rufello she's young and maybe needs help with her self esteem but her baking is brilliant (on the whole) and this is a baking contest after all.
Yes i reckon one of her relatives is on here too wintera Grin

artisan IMO they hardly ever get enough time esp. with the yeast recipes; it was good that they had the time for the brioches.

Select Good point- I buy Swedish Pearl Sugar from the King Arthur Flour Company. It doesn't melt w/ heat.

ppeat I found the Mandelmakronen recipe. It's very simple:
3 egg whites, pinch of salt, 375 g icing sugar, 250 g blanched ground almonds + extra. Beat egg whites with pinch of salt until stiff, carefully fold in the icing sugar (sieved, in case there are lumps) and then mix in the almonds. At this point my mother bakes (~ 170 C, less if it's a fan oven) one macaroon as a test. If it goes flat in the oven rather than keep its form she adds a little more almonds. For macaroons she puts it on Oblaten (which are made with wheat in Germany not rice, but close enough) but for Mandelringe she makes a sour cream pastry (which goes very flaky, not quite like a puff pastry but similar), cuts out rings and pipes the almond mix on top. It sounds unusual but they are beautiful and immensely popular with everybody who knows them.

Is anyone else more conscious of the editing this year? I tend to agree that Ruby is being presented as Fragile Philosopher Waif and Kimberly as Smug Smuggers With Giggles Hiding Steely Resolve. I don't remember the obvious construction of 'characters' by the edit (as distinct from the contestants presenting themselves as eccentric medical student or whatever) being as pronounced as in other years. Is it because there's a perception this year's batch are a less telegenic set of personalities, so the producers decided it needed more 'story'?

I was also struck last night by the way Glen's failure to get his buns out of the tin was presented - it looked initially as if he blamed Kimberly, who was the one who told him to turn the tins upside down, and she looked very callous when she skipped backwards, hands up, and said something like 'I'm out'. The close up on Glen afterwards looked as if he was angry. Again, may not bear any resemblance to what actually happened, but it looked as if the 'story' was Nasty Kimberly Sabotages Nice Glen and is Slipping Herself! Bwahaha! It also, of course, added a lot to the tension of who went, Glen or Howard...

I'm heartbroken that Howard is gone.

Poor Glenn I liked the way he made a contraption so that his dual parentage pannetone would hang upside down Grin. But I reckon next week will see the back of him.

My mother pipes it on but I'm sure spooning would be fine.
You can reduce the sugar a little, it does sound like rather a lot but I don't remember them as overly sweet.

Teapigging This always happens when you get a sleeper hit. The contest grew on people and they are now at risk of destroying what made it so special by appearing to overtly story board the show.

I'm not the only one who is conscious of being manipulated-or conscious that an attempt is being made to. I did email my concerns to the person who told me the result (as they are obviously connected w/ the production) and pleaded w/ them to keep a light hand w/ the story boarding.

PPeatfruit I sometimes process Stevia/sugar mix into icing sugar to use in baking. It cuts sugar calories and I have yet to tell the difference.

I too thought the editing of the Glen/Kimberly cakes-stuck-in-tin was really odd, I can't imagine Glen being so rude as to say "that was a rubbish idea" to Kimberly, but that is how it was put together.

Ruby is still a stunning as ever, but I don't she'll win as the PR team would never have let the winner leave the comment she did on Monkseal's blog. I think it's her mum who's on here.

I did love Howard the snail, but out of all of them it was a fair decision.

I find disingenuous.

Kimbers IS a bit pleases with herself but her baking is a cut above, imo anyway. I like the welsh woman too though I know she's not that popular. Sad that Howard went but I didn't really find much of his baking that appealing tbh.

Ooh it may have been me saying I didn't like Kimberley but I realise the error of my ways! I think she's being edited to look self satisfied and unsympathetic. Equally I don't think Ruby's putting it on - she is pretty young and seems fairly amazed when things work out.

They actually all seem v nice. Although Glen made me laugh a bit when he was overcome with emotion. Bet his pupils chuckle at that.

I had to laugh at the hemp exchange between Mary and Sue. Hilarious.

They were saying some rather unkind things, but I think Ruby would have been better advised to ignore, ignore, ignore. I don't think she comes off too well.

No, it's just the way it's called.
It's just if you needed a recipe - in case you've lost the family one, it's best to google Danish for recipes in English.
I don't know if the Danish actually know it as Danish.
It is Plunder Teig in German, not sure about the Austrian version, they like to call things differently there! :)

I remembered last night that my mum gave ds3 a file of recipes (when he was in his keen cook phase), and it included the schnecken recipe, so I might have a go at making them. It is a sweet, yeast based dough that is then layered, sort-of like flaky pastry, but with a butter and flour mix, not just butter.

Yes sad that Howard went out too but Love Ruby she is genuinely delighted when she gets praise , really hope she wins shes just a young girl and nasty twitter trolls should leave her alone, good for her standing up to them she and the rest on GBBO are all so talented, just watch in awe, my packet scones sometimes dont even turn out right!

Well I thought it was Frances' week to be Star Baker but just the one mistake of overproving one set of her show stopper buns seemed to drop her back. Shame.

And whoever said upthread that the winner of bread week seems to always win the wise, I agree. I think PH has a pretty strong opinion on who wins...

And DD1 watched it back today and was dancing around singing "Ruby's the winner! Ruby's the winner!". So that's 2 out of 3 (DD2 says "ning!" which is open to interpretation in several different ways) of my DC on Team Ruby.

The recipe for Danish pastry/Plunderteig I have from my mother uses a mix of butter and flour as well SDT not just butter.
I'm all inspired by this and decided to make Franzbrötchen this weekend.

Ruby reminds me of a certain type of person who is all sweetness and faux humility until things don't go her way and then god help us, tantrums aplenty.

But obviously I don't know the girl, so might be way off.

I hope Kim can bounce back, even if just to see her pretty smile again.

Thanks Poppy but I prefer the Mighty Monk's blog to Jim shelley's DM article though it's quite funny! Agree about Kim's smile and her bouncing back maybe she's trying TOO hard?

mignonette Yes I sometimes use fructose in place of normal sugar which has a lower G.I. (not the high sugar corn fructose!)
