I'm 43 and I honestly hate my saggy face.
I've always had no definition in my face
It gets me down
What surgery would help?
Would I need a face lift ?
Or anything else less dramatic ?

If you want to tighten up your jaw line and jowl area then Botox is your friend either side of your jaw, cheap but very effective.

There is no sagging going on there OP.
Maybe you can see your face changing but you used the wrong terminology?
It's normal to see changes in your face as you are getting through life. But they are gradual.
Whatever you do, DO NOT ever consider removing any kind of plumpness you still have. It is part of the overall proportion of your face. I think that's what you mean by shape? You mess with that proportion then you fuck everything else up. The plumpness will gradually reduce as you get older and you can't get it back. Natural plumpness is one of the visible markers of a youthful face to my eyes.
Stop looking at filtered and staged photos of other women.

You absolutely do not need a facelift and nobody in the world ever needs a facelift.

What you should start doing at your age is:
Introduce tretinoin to correct fine lines if you have any and prevent/delay wrinkles. It's a slow long game but only proven anti ageing topical treatment.
I second No7 Laboratories peptides treatment. It really is amazing. They actually have 2 serums, but start with the one in the white syringe looking tube. This will address any deeper lines if you have any. You need to use it all the time. Peptides are great in general.
Be very careful with laser treatments. They can be fantastic but they can also reduce fat. You do not need this (see plumpness thoughts above).
Look at in clinic non invasive treatments such as radio frequency, currents etc for skin firming and smoothing results. Nothing is permanent but if you get into a routine you can slow down certain visual ageing problems.
