Which plant-based milk is the least processed?

How is oat-milk etc as a milk-substitute in cooking? Can it be used for white sauces etc?

@AuntLucy I find shop-bought oat milk great for cooking, heating for hot chocolates, cappuccinos, etc. I use Oatly Barista as it also froths well for coffee and tastes nicer than the others in drinks, but any Oatly would be fine for cooking I think. I use Oatly B for white sauces, baking and all sorts.

Homemade oat milk is another matter and I only really use it for cereal or porridge as it tends to go sludgy when heated (at least when I make it, but it's cheap as chips and easy to make so I still make it sometimes on top of buying Oatly).
