I make a rice dish that changes according to what's in the fridge, and which everyone always likes. Finely chop up any veg you have around, eg onion, garlic, red pepper, carrots, courgette. Fry in a pan with bacon lardons or small bits of chicken or sausage or a combination of the three. When fried add peas to soften. Meanwhile cook lots of rice. Stir the two pans together. Serve sprinkled with spring onions and soy sauce/ sriracha/ grated cheese/ all three and a salad on the side. If you're doing the Chinese-ish version (eg with chicken and soy sauce) you can add a shredded omelette and/or cashews to the rice when you mix it in and serve with prawn crackers.

For 4.

Pre heat oven to 220C
Put a small knob of butter into 4 ramikins (old Gu pudding pots) and smear around the inside.
In a small bowl, melt 115g of butter, then break in 100g of dark chocolate, stir and set aside.
Use an electric whisk 2 eggs, 2 egg yolks and 75g sugar until pale.
Stir the chocolate/butter mixture again until smooth. Slowly pour into egg mixture with the whisk turning.
Sprinkle 30g of plain flour over the surface, and mix until incorporated.
Split mixture between the 4 same kind, and put into over for 14 mins. May need to reduce the time if your oven us better than mine.
Run a knife around the edge, and invert into a bowl. Serve immediately.
