Quesadillas are great. Tortilla wraps. Put in frying pan with bit of oil. Bung on any cooked meat and vegetables you have and some cheese. Fold over and fry both sides so it's all heated and cheese is melted.

Cinnamon beef and feta sheet potatoes
Put sweet potatoes in to bake
Fry a finely chopped onion and add 500g beef mince. Add cinnamon 1 teaspoon and season well. When mince cooked, add a pack of washed spinach and wilt it. Add 100g crumbled feta and serve with sweet potatoes. Sometimes add black olives

Crispy jacket potatoes
.Baking potatoes
.olive oil
.salt & pepper
.butter

Wash your baking potatoes and rub with olive oil. Cover with a good amount of salt & pepper. Baked at 200 for 30 mins, turn and bake for a further 30 mins.

Cut and stuff with a good helping of butter (preferably Lurpak) and your favourite filling. (Mine is tuna, onion mayo and my husbands is coleslaw).

Simple, cheap but oh so good!!

Definitely a favourite in our house!

bolognase mince stirred through fusilli pasta into a casserole dish with cheese sauce on top bake
mince with sliced garlic bread for the topping.
macaroni cheese with a base in the dish of salmon fillets.
tuna splodge:cambells tomato condense soup.tin of tuna.pasta.grate cheese on top.yum

Baked sweet potato with lemony topping.

Bake sweet potatoes in the oven for 30-40 minutes.

For the topping. Finely chop one garlic clove add to a hot pan with spring greens (or kale), halve some black olives add them to the pan, drain & rinse a can of butter beans add these to the pan then squeeze on the juice of half a lemon. Stir fry until hot & cooked through.

Cut the sweet potatoes in half and fill with the lemony mixture. Top with plain vegan yogurt - if you'd like an extra kick add some chillies.

Its a quick recipe but a firm fave in our house.

Butternut Squash soup
In a large saucepan, fry 1 chopped onion & 1 garlic in 2 tablespoons oil for 5 minutes. Add 1 chopped butternut squash and fry for another 5 minutes. Add 2 pints of stock, bring to boil & simmer for 30 minutes. season. Blitz in blender until smooth.

Stewing beef
Veg (potatoes, carrots, swede, parsnip, leek, onion)
2 Oxo

Throw the lot on the stove in a big pan and let simmer for hours. I like to throw in a can of beans when it's ready to sweeten it a bit, my dad loved nothing more than a sprinkle of chilli powder in his!

Brought up to date this can also be cooked in a pressure cooker for around half an hour on a slow release.

Lobby is always better on the second or even third day. It's one of those dishes that is left on the hob, thickens up and improves no end! Serve with crusty bread.

Sausage pasta bake.

I roast six good quality sausage until browned and cooked through and chop into slices...I add these to a sauce I've made by frying chopped onions, peppers and adding chopped tomatoes.

Add this sauce with the sausages to some cooked pasta...penne or fusilli. Add a ball of mozzarella chopped up and mix through.

Put all this into a baking dish and top with parmesan.

Bake until brown and crispy on top.

This is going to win no health awards but I offer you Lindor Cupcakes.

Freeze a box of Lindor (not strictly necessary).

Make your favourite chocolate cupcake recipe and shove a frozen (unwrapped!) Lindor ball into each cake before baking.

"Cowboy stew" AKA chilli, but DC won't eat it if I call it that đŸ™„

Low heat, add chopped onion, garlic, carrot, celery, sometimes courgette etc.

Tip this out and keep warm while you dust chopped beef in flour then fry til sealed.

Add a time of chopped tomatoes, big squeeze of tomato purée, and about a cup of beef stock then simmer for 45 or so til ready!

Serve with rice with peas and sweet corn mixed in, grated cheese and preferably garlic bread too!

This is my go-to easy prep, minimal washing up meal. It also works well for a crowd!

Roughly chop peppers, aubergine, onion, sweet potato (and any other veg you fancy) into chunks - about an inch or so long. Peel a few cloves of garlic.

Chuck the lot into a casserole dish (one that has a lid preferably -but covering with foil also works)

Add a couple of table spoons of olive oil, 2 tsp paprika, salt, pepper, and a drizzle of honey. Mix the whole lot up so that they're well-coated in the seasoning.

Cut some chicken breasts long-ways down the middle (so they're skinnier) and season with the same mix. I do this in a sandwich bag because I can squidge it about and make sure it's completely coated.

Place chicken on top of veg and put the whole lot in the oven (with lid on) at 180° for 20 minutes. Take the lid off, and put back in the oven for another 20mins.

Meanwhile, make up some couscous using chicken stock for flavour.

Serve the lot with a dollop of creme fraiche. Mmmmmmm

I really love this celery, fennel and ginger soup. It is easy to prepare and surprisingly yummy:

Chop and saute an onion with a knob of ginger and a chopped up fennel bulb, in olive oil, for a few minutes. Add celery, a fair amount, and vegetable stock. Simmer for 20 min, blend and enjoy.

A lamb stew-with bacon as the secret ingedient-it's amazing. Fry lamb with some chopped bacon for 5 mins til it browns, add to a casserole dish with some boiled veg of your choice and about a pint of stock. About 90 mins in the oven at 200 C does it-I often add a tin of new potatoes half way through and maybe some dumplings.

Meatballs:

500g lean mince
4 spring onions
Basil leaves
Tinned tomatoes
Red pepper
An egg

Mix an egg, mince, two spring onions (finely chopped) and the basil leaves (also finely chopped) in a bowl. Shape into 20 meatballs and grill, turning often, for ten minutes.

Fry the remaining finely chopped spring onion and diced red pepper briefly, add the tin of chopped tomatoes and chuck in the meatballs, leave to simmer while you boil any pasta of your choice, then serve.

Dave's Chicken Thing - brown chicken and bacon in a pan, add chopped apple and a slosh of cider (you can drink the rest) and a tin of chicken soup. V tasty for little effort, also makes a great pie filling.

Spanish style baked eggs.
Slice onions, chorizo, garlic and peppers and fry till onions and peppers are soft. Add couple tsp of paprika and tin of tomatoes.
Slimmer for a while.
Make small wells in the sauce and crack an egg in to each well.
Bake until eggs cooked to your preference.
Serve with rice

Jazzy Beans

Pour beans into saucepan.
Add tablespoon of tomato puree and a splash of Worcestershire.
Pop bread into toaster.
Add a pinch of mixed herbs and either some chilli flakes or Tabasco.
Top toast with a slice of ham, and pour the beans over.

Toad in the Hole is a firm favourite here - quick and easy and perfect with loads of veg and gravy. It's only me and 4yo DS here so this makes a pretty small one.

Make batter with 1 egg, 70g plain flour and 90ml milk. Brown sausages in frying pan. Meanwhile heat 1tbsp vegetable oil in oven proof dish, then transfer sausages to said dish, pour in batter and bake for 30 mins. Done!

Red Pepper Frittata
300g cold salad potatoes sliced
Red pepper chopped
Spring onions chopped
Grated cheese 80g
Sauté peppers and onions, add potatoes.
Whisk 6 eggs in a bowl with grated cheese. Pour into the pan. Cook on low heat until almost set. Finish under grill .

Sweet potato tagine. Chop up some sweet potato, parsnips, carrots and whatever other vegetables I have lying around and boil up with tinned tomatoes and harissa paste. Yum!
