British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. British Turkey is here to help with everything you need to roast your turkey to perfection. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. As well as having the most festive nostalgia, a whole bird is best value for money - for about the same price as a crown or a ready stuffed breast joint, you get the lovely leg meat. This means yummy cold cuts for Boxing Day and even enough leftovers enough to create a tasty dish for the freezer. So this Christmas plump for a whole turkey - you’ll get 3 meals in 1!”

So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

Turkey curry is always a favourite or turkey sandwiches for Boxing Day with chips

We normally buy a turkey that is only big enough for one sitting. If There is any left then cold meat and chips are my favourite. x

We then use the left overs in a turkey and ham pie

Day 1 Roast Turkey
Day 2 turkey stew/ casserole, with potatoes, carrots, onions, leeks, garlic, and thickened slightly with left over stuffing, and turkey and either cranberry or mango chutney or Apple chutney sandwiches, or open sandwiches, with turkey, ham, cheese and fish alternating
Day 3 creamy turkey curry, v mild, with rice and salad.
By this time there is usually only the carcass left, I have never managed to make enough curry. But thereafter, with any remains

Stir fry
Turkey, pea and ham pie
Turkey and leek pie
Turkey, leek and Bacon pasta
And turkey stock soup, either " cream of" using milk and liquidising, with leeks and options, or with veggie chunks
Or Persian turkey stew, with pomegranate moles, onions, garlic, and pilaff.
Or saffron turkey
Or turkey rice and peas, Caribbean style
Or turkey with apricots and couscous

It's remarkable how short a time a turkey lasts with such treatment.

It's got to be a sandwich with nice thick cut bread, iceberg lettuce, cranberry sauce and stuffing.

Or there's always a Bridget jones turkey curry if we have a lot!

We don't normally have much leftovers from our turkey, but we usually have enough to make a couple of sandwiches - yum x

Turkey leftovers are turned into turkey tikka masala, turkey chow mein and turkey & leek pasta. Anything I usually use chicken for.

By the time we have had our fill of turkey at dinner, then cold turkey and stuffing sandwiches for supper, the bit of turkey that is left is served with assorted sliced meats on boxing day in a buffet style :)

we always buy a slightly bigger turkey than wee need, we have 3 young boys (2,5,7) and regardless how much they eat for their dinner they always want more later on, as Christmas dinners in our house are traditionally between 2-4 (depending if i have to work or not) sandwiches and soups are the first thing we make then if anything is left over after them a curry for the family boxing day party at my mother in laws, but its all down to what the kids want first!!

We always mince it up and make turkey burgers , as they can be easilly stored in the freezer.
