What are the good brands of kitchen knife please?

I think it is mostly about different shapes and sizes (and they then have hollow or solid handles as appropriate). I am sure we have a mix. If you can find somewhere where you can go and physically see/play with some professional cookware company have them in the shops, and now I come to look also have very good deals on the sets.

Don't waste money on one of their knife blocks though - they are overpriced and not very good.

We have 2 Global knives, have had them for years, they are fab. DH keeps them samurai sharp with a whetstone

Yes, agree there. We bought a special purchase set of global in Selfridges 6 years ago. The block that came with is really isn't all that.

i bought a global knife for my new kitchen when i wa srtill with exh ben apart 8 years and it still sems to be chopping dope effectively i notice when i go round to dd2s htere it is on the breadboard

Lots of chefs use these at work.

They sharpen up beautifully with a few strokes on the steel

this is very interesting

I went to see Mr Global himself do a demo at JL many years ago. And so I got a set.

But if I get the chance at work I would take up another type of knife every time.

I've let my home Globals get dull now. Will be stocking up with Victorinox when we move in to the Wong Wing.
