Have you had both induction and gas hobs? Which did you prefer and why?

If you've had experience of owning/long term using both induction and gas hobs please could you share your preference between the two with reasons?

Note - I'm only interested in the comparison between induction and gas - not other types of electric hob and gas.

Love my induction.
Can’t find a single thing my gas did better and on top of all that, it cleans in seconds and so easily.. and is safer ( turns off automatically when nothing is on hob)

Until last year I had only ever used gas hobs (willingly - short term electrics in rented as a student). I'm 65 and have been cooking since I was 10.

I love, love, love the induction hob in my new house. It was the cheapest I could find and is not branded and could be better in terms of evenness of heating and I still love it.

So responsive. Boils water quicker than gas. Frying pans don't get blackened as the only heat is on the base. Lift the pan and the power goes off. You can't set fire to anything (easily) as a tea towel can sit on it and won't even get warm.
The lowest heat on my last gas wasn't really simmer, unless I put the biggest pan on the smallest ring with the lowest power - and I would still get burnt spots on the bottom.
The induction can not only simmer it can be set low enough to work as a warm plate,

I wouldn't willingly go back

Our previous house we had an induction hob and here we have a gas hob and I much prefer the immediacy of the gas. I know induction is meant to be the same, but it's not. Plus, you can't use a wok properly on an induction. It doesn't seem to have the same fierce heat. That said, where our hob is, the evening sun shines and it's quite hard to see if the flame is lit, but when we finally move our kitchen around it will be on the other side so we won't have that issue.

forgot about the easy cleaning - which was my main reason for wanting one in the first place. Soooooooooooooo much easier

I never wanted an induction hob but so glad OH persuaded me to switch from gas. It heats instantly and so much easier to keep clean.

can see why it isn't great for a traditional wok as the cooking depends on the contact with the hob. For me that's a bonus - and you can now get flat bottomed woks which will work great.

Immediacy - I can't agree. For me I find induction quicker.

Gas. I like the power boost on my induction hob (can put a pan of cold water on and it comes to boiling point incredibly quickly). But what I really dislike about my induction hob is that when you lift a pan momentarily the hob starts beeping and the power is lost. When I do stir fries I sometimes want to lift the pan to toss the ingredients. Or when I make omelettes I like to rock the pan so the liquid egg is distributed evenly. Really annoying to keep losing power.
I don't know if all induction jobs are like that, or if it's just mine. There was already one in the house we moved into last year and I have no other experience of them.
Also, and most important of all, my nervous rescue dog is terrified of the induction hob and rushes out of the room when I put it on! She's okay if it's on low, but it makes a bit of a high pitched noise the hotter it is.
Much prefer gas!

I've had induction for about 9 years and gas before. I would choose gas for cooking in a wok and frying any day, induction can be severe heat and flat bottom pans only, but for ease of cleaning and instant boiling induction wins.

Love my new inductíon hob, pleasantly surprised to find it's even more responsive than gas.

Re "rocking pans"/ tossing stir fried - it may depend on the make. Mine gives you a couple of seconds grace before it switches off and starts beeping, plenty time to swirl oil over the bottom of a pan or flip a pancake.

I have had both types , current kitchen has an induction hob. I definitely prefer the induction hob as it is so easy to clean and I feel so much less anxious letting my teens cook on it . Husband is professional chef and occasionally moans about missing the gas hob 🤷‍♀️

Induction hands down. You don’t need to look at the flame when you are turning it up or down... it’s so fast and easy to clean. I’ve had gas, induction and now gas temporarily and cannot wait to go back to induction.

I’m a very fussy cook. In theory gas would have been my preference but honestly? Induction every time. Easy to clean, safer (no blow out or overflow issues), turns itself off, quick, I just live it.

I'd choose gas, had gas in previous house. In this house we got induction, I don't like it.

On a previous thread I was the only one who preferred gas though!

Induction is cleaner and it's fast and economic.

But you can't beat gas for using a wok or making an omelette.

We have an induction hob and I hate it! I really miss my gas hobSad
I love how easy to clean the induction hob is and quite like the power boost function but apart from that the gas wins hands down! I don't know if it's my particular induction hob or all of them but pans are constantly boiling over and it turns itself off, we have touch buttons which don't seem to register my finger, it scratches easily, the four 'rings' don't heat evenly if on together, no good for stir frying etc etc.
When we had the kitchen done we got the builders to put in a gas point too, so when this hob dies we'll definitely have a gas hob again.

Induction wins hands down for me. It's the ease of cleaning that makes such a huge difference. Admittedly there's a non-trivial learning curve if you've been using gas all your life, but it's worth it.

I am clumsy so would avoid induction - I'd drop something on it and break it. I was going to say 'probably drop' but that would be a lie.

Love my induction. Lots of points already made above, but also it simmers much more easily than gas.

Also, its much safer if you have someone a little distracted/adhd/dementia in the house as there is no risk of turning the gas supply on and then forgetting to light it

I cook a lot and didn't get on with an induction hob.

It doesn't work with all pans which is annoying and being a sealed electrical unit, once a ring breaks it's broken... a gas ring not working usually just needs a good clean!

Induction but make sure you get a powerful one and good pans. Some pans are labelled induction but don't have enough iron and so are v slow to heat.

Induction without a doubt. I spent 25 cooking on gas hobs and would not go back. All my existing pans were suitable for induction. The only thing I bought new was a non stick milk pan.

My mum has an induction hob, and I thought I would love it, but I don't. Gas feels more responsive to cook with - it's easier to make tiny adjustments as I go. The induction hob is easier to clean, although my gas hob is on glass, which looks nice and is easier to clean than most other gas hobs. And now I've written "hob" so much that it has lost all meaning.

Induction, every time. I hate cleaning gas hobs. But I researched carefully to get a powerful hob - some won't let you have all the plates on at the same time.

Induction- they just take a bit of getting used to.
I'm not very into cooking though (understatement!) so for me easy to clean and safety wins out.
Can easily cook pasta, casseroles, poach eggs etc though on mine.
