Have you had both induction and gas hobs? Which did you prefer and why?

If you've had experience of owning/long term using both induction and gas hobs please could you share your preference between the two with reasons?

Note - I'm only interested in the comparison between induction and gas - not other types of electric hob and gas.

Induction. It's amazing how, if the milk boils over, you can clean it with one wipe of the sponge!

I like my new induction. It’s so fast to boil water and so very easy to clean. It cooks very evenly. I also feel safer when my elderly parents visit. A couple of times my dad has left the gas on. I don’t think I will ever go back to gas but I do miss “fire” if you know what I mean.

Definitely induction. I have a 12 year old Neff hob and don't have any of the issues some posters have so it definitely depends on the make.

It's very fast, easy to clean with no fiddly knobs, gives me plenty of time to toss food in a frying pan, pans are stable on the rings and it turns itself off when I'm finished cooking.

I bought my cookware from Argos and Sainsbury but TK Maxx/Homesense sell them and I think most if not all Ikea pans are suitable.

We had gas for about 12 years and now had induction for about 5. Induction is so much easier clean and in my opinion looks nicer too.

Induction. I've had 3... you get what you pay for in my experience, in terms of responsiveness, power and longevity.
Would never go back to gas

Gas cooks better.
Induction cleans better.
And I have induction at home, and have just spent five weeks in a holiday home with gas, so I'm fresh out the blocks on this one.
Go with whichever means more to you. Having said that, the differences in cooking are probably subtle wheras the differences in cleaning are big, so on balance I'd choose induction. HTH.

Well that's fairly unanimous! I had decided induction but was then wavering, I've only ever used gas, but my kids are afraid of the flame and I'd like to get them cooking.

Does anyone who has had me and loves it care to share the make/model?

I set fire to a loose shirt once when cooking with gas when I was concentrating on something else. I’ve always been a bit paranoid with gas anyway. Induction is so much safer especially if you have kids cooking.

Inductions are indeed quick, and very easy to clean. However if you like to cook with frying pans, woks, etc it’s a gas hob all the way. I would never take induction over gas ever.

The trick with frying on an induction hob (I've only had one a few months) seems to be to let the pan warm through thoroughly before putting the fat in and attempting to fry anything. It isn't as easy as gas, and takes a bit of getting used to, but the drop off in performance is fairly marginal.

I have a Rangemaster induction on a range, and I'm swapping to gas as soon as I can. The only thing I like about it is the warming plate at the end, and even that I only use very occasionally for pancakes/large family roasts, so is a luxury I could easily forgo.

I prefer the instant variability you get with gas, and I feel like they're hotter and more consistent with temperature.

I don't agree with the cleaning either - even pasta water bakes on and needs a scrub, and if I do anything that requires shaking the pan (like popcorn), then that silvery-ness comes that you can't get rid of at all (I assume it's me rubbing some coating off). Gas hobs I can just bung all the bits in a bag of oven pride (or set burners up to max and burn it off) and they're lovely again.

When we fitted our new kitchen I knew I wanted induction for ease of cleaning, but I have a pizza oven that only uses gas and DH prefers gas for wok cooking.

We ended up getting a mixed hob and it is perfect:

Also it depends on your cooking style?
Induction has many pros but I also miss gas hobs I use a wok.

@DianasLasso - that's what you're supposed to do and what I was taught by someone who taught catering.

We have a Stoves electric induction range and I love it. Can't speak for Rangemaster but I find it easily controllable and very easy to clean. I wouldn't now go back to gas. Plus we're moving away from fossil fuels.

Ours is John Lewis own brand. I far prefer it to gas for all the reasons above.

Bought an induction hob for my last house. Loved it. Moved to a new house with a brand new gas hob. Tried it and realised how inferior it was. I bought another induction hob and sold the gas one. I’d never have anything but induction again.

Induction is easier to clean but in terms of cooking I prefer gas. Induction just doesn’t get wok etc hot enough, hate having to buy special pans for the induction. Have had induction for a year now and I kind of hate it tbh

Until 10 years ago or so I always had gas hobs, which I much preferred to electric. I moved over to an induction hob and now wouldn't go back to gas. There are only two disadvantages with the induction hob in my view:

  1. it doesn't work during a power cut (obviously)! A couple of years ago we had a power cut for almost 24 hours (on Christmas Eve). With a gas hob I would have had lots of scope to cook. As it was I couldn't even make a cup of tea for my elderly father who was staying with us.

  2. the cats once switched it on by jumping up on the hob and walking on it. Unfortunately I had left an empty pan on it. I now switch the hob off at the wall when I'm not using it.

Do you all have hobs you can jpin rings together on? I bought a new build which came with a noce Siemens induction hob. However they are 4 separate rings. I hate it as I have pans which are too big etc

I had an induction hob for 10 years and loved it. We moved to a place with gas and it's horrible. Feels much more dangerous and the hob is so much harder to clean. Puts me off cooking. We are having a new kitchen with an induction hob in a few weeks.

The timer facility is also very useful e.g. cook for 30 mins and it will switch off automatically. Very safe if you are eating in another room or busy with something else. Just like an oven timer but on the hob.

Timer on the induction hob that is. Each burner can be timed individually. So useful.
