Induction or gas?

Hi

I'm having an offer on a house accepted today (fingers crossed). It's an old house, recently renovated with a full brand new kitchen.

The developer has put in an induction hob. I've asked if it can be removed and for him to fit the gas up there for a gas one instead.

My experience of induction hobs has been so mixed. If I ask now, he will include it as part of the sale including it being a certified gas engineer. OR should I leave the induction one in for now and pay later to have it changed if I really can't stand it?

I can't think straight at the moment.

As a life long fan of gas, I would stick with the induction hob.We first used one in a holiday cottage and it was a game changer. I'd never go back to a gas hob now.

I recently swapped to Induction. Overall it's great. Very clean, no harmful emissions, very controllable and easy to cook on and clean. Boost function is impressive and bridging zones is useful. I wouldn't go back to gas given the choice.

Here though are a few niggles I have with induction, if you're interested...

The glass top is quite slippery compared to gas hobs. Pans move about quite easily.

Gas hobs are quick and simple to adjust. My induction has something like 19 heat settings and navigating them is a bit of a faff by comparison. Especially turning a zone off (unless I'm missing a trick).

I miss the visual indication and warmth of gas.

These are only small niggles and probably a part of adjusting.

I've had both - had induction nearly 10 years...just moved 18 months ago to a house with gas. Induction requires NO cleaning beyond a wipe with a cloth. Induction is responsive as gas. I never found pans moving bit do not slam them down or drop them or you will shatter it. Get it insured asap in case of an accident. We had mid price induction pans (I paid about £90 11 years ago for a set of 5) - they were great. Back then it was hard to find the pans....not the case now. Tbh... I would live with the induction you may love it.

I’m not sure why you’d have an issue with induction? I find it superior to gas and can’t think of a single problem with it.
Perhaps you’re thinking about an electric hob? Those are rubbish.

Are you sure it's induction you have a problem with, and not ceramic? Ceramic takes ages to adjust the heat. Induction is isn't. It's cleaner, more responsive AFAIC and the big bonus... no horrible cleaning of a gas hob.

I would see how you get on with that induction hob before you remove it for a gas one.

I have had mine 6 years and love it. It does take a bit to know what settings work for what you cook but cleaning it is far easier and the kitchen doesn't get anywhere near as hot. I have never found it slippy, yes pans move easier as you are not scraping the bottom over the pan support but I never think the pan will slide off the hob.

Would never have gas after having induction. It's quick, easy to clean, and once you've be got the hang of the controls is easy to use.

I used to love gas but would never go back now. My induction hob is marvellous. Just as easy to control as gas, easy to clean and I love the fact that the hob itself doesn't get really hot.

I had 10 years of an induction hob and have moved to a place with gas. Going to have a new kitchen in a few months time and will get an induction hob again. I miss it so much. The gas hob is hell to clean and puts me off cooking.

I don't understand about the slippy thing? It's far worse trying to balance a small pan on a gas hob

I’ve recently switched to induction after always having gas. There are pros and cons but enough pros that I wouldn’t go back.

The main con is that it does take more steps to adjust the heat. You have to tap on the zone, then slide the heat up or down (slide on my model, dial on others, on some you have to tap tap tap which is even worse IMO). Doesn’t sound much but it does take extra time especially if something is starting to burn. Whereas with gas obviously you just turn the knob as there is one for each zone.
Also at high temps I get a slight vibration/buzz which is very slightly annoying.

Pros:
Cleaning is about a million times easier.
Clever features - eg on mine I can set a timer for each zone and the zones will switch themselves off automatically when their time is up. This is brilliant. No more mental arithmetic when I’m trying to cook several things needing different times. Also no more running to the hob when I hear the beep as it will turn itself off.
Looks sleeker, I have it on the island so this was important
No more wobbly pots if they are the wrong size for the trivet
No more scorching myself as I try to reach that bit of pasta that fell out of the pot
Don’t get scared about paper and teacloths going up in flames if left too near the hob
Don’t get scared about gas leaks if someone left a burner on by accident (induction will not heat if no pan on it)

I recently got an induction hob and like pps, I’ll never go back to gas.

I can actually simmer things now which my gas hob never got low enough to do.

I had an induction hob put in in my last house. Liked it and definitely prefer cleaning it to cleaning gas hob but still put gas hob in new kitchen just fitted in new house. I prefer it for cooking on.... Better with a wok, no issues with slightly uneven pans not heating properly etc.

I switched to induction and would never go back to gas, so much quicker to cook on and easier to clean.

Hmm. Good luck trying to cook on your induction hob during a power cut...! I have a gas hob and electric oven, so I can always produce hot food of some sort. But perhaps you don’t live in rural Scotland, where the migrating geese used to repeatedly trip out our power cables every autumn. And heavy snow or high winds brings the cables down off the pylons altogether.

I've had induction for 8 years now and I love it. Gas is good but induction so very much easier to clean.

Lots of areas of UK don't have gas so it would make no difference in a power cut!

I live in a rural area and have a dodgy electric supply with no mains gas supply but I much prefer my induction hob I have now to any gas hob I have had before. My hob is an AEG one and simple to control, it's responsive and very quick, so much so that we have swapped from an electric kettle to a stove top one.

Can I ask if using electric has affected your bills much? We're all gas atm and might make the swap.

I prefer induction to gas as well. Like pp have said, I finally have a hob you that controls at a low enough heat you can simmer properly on. It is harder to get really hot than a gas hob, but a good hob does a really good attempt and cast iron pans make a huge difference. I also like it being easier to clean.

We are rural, but have no mains gas and have oil heating. We used to have an LPG hob but it was even worse at controlling at low temperatures than a normal gas hob (apparently a common problem) and I'd never go back. We have a camping stove as a back up for power cuts, but so far have never needed it.

Gas hobs are a major contributor to air pollution - link here, and badly affect the air quality in your home. I would never choose one over induction.

Had gas for 64 years (ok, I didn't use it myself for the first few years). I've had induction for 9 months - I wouldn't go back to gas.

Cleaning is the biggest but so many more benefits.

Simmer means simmer - not burn in one spot - and you can even just keep warm rather than continue to cook.
