I second the caution about waiting until you have a plastered room to finalise a kitchen. It's OK if the space exists already, but if it's a hypothetical room that has yet to be built, a million things can change the dimensions. It's a good idea to have an idea of the range you want, though, because you can then design details in. For example, I knew early on that Ikea units are 63cm deep, not 60cm deep, which meant that a big window on the plans had to be moved just a few centimetres to one side so that it would be bang in the middle of two facing runs. Knowing this months ago is paying dividends now the kitchen is going in.
On colours, I think paint manufacturers are making big efforts to try to get the fashion in wall colours to cycle more rapidly, and looking at the amount of people who went for grey who are now switching up to dusty pinks/purples, I suspect it is working well for their profits! It's less of a concern for walls, where you can repaint, than things like kitchens or bathroom suites. But I still think if you love something -
really love it, not just in a "it's fashionable" way - it's worth getting it. The exception would be if you are planning to sell in the short to medium term, where something really far out there might put buyers off. That said, my BIL did a gorgeous green kitchen and sold his house for £100k more than he bought it for, proving that anything done well will sell!
