Please, can you critique my prepping plan? Is there anything we are missing?

FOOD,
Our kitchen cupboards are normally reasonably stocked with at least a week of food at any one time. We have a 6ft chest freezer and a regular freezer stocked with meat (Venison and Pork) and leftovers. We will use this first. We have approximately 2 weeks of food here. Our Second level is pressure canned food, we have a mix of venison, and vegetable sauces, here we have approximately 2 weeks of food.
Our final level is shop bought cans and dried food again another 2 weeks of food so that gives us a total of 7 weeks of food in the house. Plus 30kg of dog food, for the dogs.

In addition to this we grow our own vegetables and keep chickens.

WATER
We have 113L of water stored, with the capacity to store an additional 120L. We also have our own well and electric pump

SANITARY
I make my own soap and bath products, I guess we are short on loo roll

POWER
We have a 5000w generator and a 1200 generator. The bigger generator is powerful enough to run the fridge, freezer, well pump and a couple smaller items.
FUEL
We have a wood burner for heat, we have 1 acer of woodland at home and 120 acres of woodland 20 miles from home. We store 30-40L of petrol, and 4-5 propane tanks for the BBQ/propane heater

SPARES
DH Keeps a set of basic spare parts for both cars, ATV's Chainsaw, Mower and other items around the house. We should be able to repair the majority of things at home.

DEFENSE
We have firearms for hunting which can be used. We store 200 bullets per gun ready, and have the equipment and supplies to manufacture our own ammunition (additional 300 bullets per gun)

GO BAGS
We each have a go bag, with basic survival items, 24hrs of food and medical supplies. We also have all our important documents scanned and stored on USB. Each Car also has additional survival items and a tool/spares kit.

MEDICAL
Comprehensive first aid kit with dressings, plasters. Military battle dressings
Burn Kit
Suture Kit
Dental kit
Meds including paracetamol, aspirin, ibuprofen, Imodium. We also have prescription antibiotics and painkillers.

MISCELLANEOUS
Police scanner/walkie talkie type radios
AM/FM radio
Spare mobile phones
Geiger counter
Alcohol and cigarettes for trading
Vegetable seeds for the vegetable garden (2 years worth)

It depends on what kind of catastrophe you envisage. Documents scanned onto USB sticks might not be readable in some scenarios (no electricity, no computers functioning).

Interesting that originally I was like woah that’s a bit much for Brexit but then you explained hat you were in the US and I changed my mind and thought it’s a pretty epic and sensible lot to stash. Nothing to add although sour dough starter is a great idea.

The sourdough is a great idea!

We do grow herbs so I rely on those rather than buying extra.

We planted an apple tree this year, next year we will plant a cherry tree

Cloudtree- one of the best sources is to ask someone who already has a good one! Local 'artisan' type baker might be able to help or put a request up on a local Facebook baking group (that's how I got mine)

With the scale you seem to be going for, seven weeks food supply seems like nothing to be honest, I'd was expected you to have somewhere closer to 3 months absolute minimum or more like 6 months because crops take time to grow & nobody can guarantee a successful hunt.
Do you smoke/cure any of your meat/fish?
I make my own bacon/ham etc... here in the uk because it's cheaper than buying it & tastes so much better plus it stores for so much longer e.g. a decent air dried ham takes at least a year just to make (most of which is just it hanging around) although you can keep it another year or so if you prefer & bacon stores for several months after it's cured.
Same goes for cheeses etc..., very easy to make a simple cheddar or similar hard cheese, can easily be stored for a year to ripen if you don't mind stronger cheeses.

What do you do 10 days after the SHTF when your gennys are dead, you can't get water from your well because the pump is electric, your freezer is dead etc....
You need an alternative way to get water out of your well as a minimum, you can't survive without that.
Do you have any other power sources if you can't get more fuel after your initial supply runs out?
If you are bugging in, do you have secure perimeters?

Personally, if I had the option, I'd be carrying a lot more bullets than you are & make sure I had a fully stocked firearms servicing kit & hard copies of all technical data relating to those firearms.

Medical supplies mean nothing without medical knowledge to know how to use them, so do you either have a decent reference (hardcopy) or someone with some medic training?
Same goes for other information.
Doesn't matter how many books you have on your kindle, at some point they will want to connect to 'renew' your licence & you won't be able to access that book.
You need the knowledge to learn new skills in hard copy.

You seem to have no cash/gold options.

If the banking system is down, most people will still take cash, at least at first & many preppers also look at gold as a trade medium.
Enough cash to fill up the tanks in your cars as a minimum & do a last supermarket run if possible is always a good idea.

Last thing I can think of right now depends on what you do at the moment.

If you already use your woodstove 100% of the time as you would in a SHTF scenario, then you have a spare axe (just in case) & a decent set of callouses.

If you don't, buy a spare axe & padded gloves like the fingerless ones that cyclists use because if you suddenly up your tool usage considerably, your hands will be made of blisters by the end of Day 1 without some protection.

They give you more control than the gloves with fingers that I would expect you wear to use a chainsaw.

Those gloves are worth having anyway.

We are continually improving our stock, by increasing food availability. Later this year we will begin breeding meat rabbits.

My aim it to switch over to pressure canning completely to render the freezer surplus.

We also plan on installing a hand pump for the well, as electrical power is a luxury not a necessary requirement.

On the apple tree front, unless you know of a neighbouring crab apple tree, you need at least two from different groups to ensure fertilisation.

Actually you can buy apple trees now that do not need a sister tree to fertilise. Search 'self fertile'.

Ahaha! I should have read further.

I would advise against people in the U.K. finishing courses of antibiotics early in order to create a stash - in case anyone is thinking of doing such a thing (have seen it mentioned elsewhere).

If you feel civil unrest is a risk and something you are prepping for, then you should establish a secondary rondezvous point at your woodland area. In addition to food and water for 48-72hrs to allow breathing space and plan formulating, you need a tent and fire kit. A scramble bike? Means of communication?
Your home and your stores could be a target and you may need to get out quick. Everyone needs to know where to head for and what's there.
