Veggie nugget dilemma

What would you serve veggie nuggets with for a toddler? I made them last night from left over mash, broc, cauli some green lentils and cheese. Drawing a blank on what to serve them with for lunch.

theyre already quite potatoey so chips are out and just salad doesn’t seem enough. We’re having rice for dinner so can’t do that… help a mumma out mnetters

Veggies, mash, waffles, baked beans, spaghetti, cous cous.
Most things would work - they aren’t made of potato from what you have listed so I wouldn’t rule out potato’s.

Stropalotopus83 · 31/05/2022 11:31

Pasta? My kids would eat literally bucketfuls of plain (sometimes buttered) pasta as toddlers. Alternatively sweet potato wedges or even just cucumber sticks. Been a while since I've had to feed toddlers but I'm pretty certain pasta made up 70% of their food!

Baked beans?

I'd go with baked beans too. Or anything else they like to dip into. Maybe a few sticks of their favourite finger veg. You've covered carbs, veg and protein in the nuggets so it's just about a bit of a texture/flavour change on the plate.

At 1-2 DD would have had pea and sweetcorn on the side because she had them with everything. Now at 3.5 she'd choose beans or just on their own with a bit of ketchup.

Any which way they sound delicious!

Sorry I’m a dope, I meant they are made from left over mashed potatoes and then the veg lol

A bit of grated cheese, some hummus, baked beans, crackers

Not a bad shout, my toddler loves pasta. I’m the oddball, bloody hate the stuff lol

Might do hoops, she’s not a beans girl!

anytime I think outside the box and make some insta style effort the food ends up lovingly spat out on my floor so we’ll see how they go down.

only child ive ever met who would shun a chicken nugget for a piece of cauliflower haha

Peas, or green beans. Anything green.

Chichz · 31/05/2022 11:52

Sounds delicious. My son (nearly 2) would just have these and maybe some cucumber on the side/carrot sticks on the side - as long as he got pudding 😂

What pud would you give? DD tends to have just fruit or she’s mad on those mr Kipling finger cake things. She’s got yog for dinner as raita and she normally goes mad for that and eats loads of it

SheWoreYellow · 31/05/2022 11:57

You don’t need pudding at lunch 😀

Chichz · 31/05/2022 11:58

I was going to say fruit and yought. He'd eat that at every meal! I would still give him that despite the raita as he doesn't have milk anymore so I'm trying to watch calcium intake a bit more. Mmmm, raita! They love anything dippy at this age don't they, haha.

(And yes, sometimes there is something cakey involved here too...)

First ingredient in them was mash

Chichz · 31/05/2022 11:59

@SheWoreYellow Depends I guess. We give the biggest meal at lunch given the chance, as he tends to settle better for nap that way - and it's what they do at nursery.

INeedNewShoes · 31/05/2022 12:01

The sweet potato chips/wedges suggestion is a good one. Then I'd do chopped cucumber/tomato/sweetcorn as well.

I give sweet potato to my DD sometimes to accompany carby stuff.

Thebeastofsleep · 31/05/2022 12:17

Something with protein in. Sounds lovely but lacking protein. If you aren't veggie I'd say chicken and beans. If you are veggie then beans. She doesn't like beans so cheese and hoops.

Sure, but the OP is giving pudding at dinner.

They had lentils in, either way they went down like a lead balloon.

The hoops and cheese were eaten and some buttered bread fingers and cucumber sticks. The nuggets were, and I quote ‘yucky’

@Lillonely That's so funny. Happens to me all the time, which is why toast tends to appear quite regularly!

@SheWoreYellow I had presumed the raita was part of the main course. Perhaps OP can clarify on this important matter. 😂

SheWoreYellow · 31/05/2022 13:03

And I only meant not to bother with it 😂

I can confirm that raita or yoggy sauce as DD calls it will in fact be part of tonight’s main course.

the menu is slow cooker chicken shawarma, Persian rice (I’m trying to master the crispy bottom bit), what ever veg I’ve got in the freezer with raita on the side, maybe some mini wraps as flatbreads too. My floor is gonna love it, really looking forward to sweeping it up later 😅

Wow OP. Your menu is very involved! Top-class parenting. I have definitely overelied on nursery providing a varied menu and we tend to go more for simplicity when he's off. Sounds so yummy though!

Thanks for the clarification, haha. I don't normally post on here. You can tell it's half-term! X

Greensleeves · 31/05/2022 13:09

I'd shove them in a wholemeal wrap with a bit of cheese and mayo

Honestly it’s not, it’s stuff you can bung in the slow cooker lol. The rice is just half boiled rice that you stir some yogurt and butter into and the drizzle some saffron water on top and let steam and the bottom catch a bit lol.

i struggle so much with lunches, so so much. It feels like when I do go all delia smith they food gets vetod as yucky
