Cant beat a fish pie and its one pot dish so nice and easy.

Jamie's Spring Poached Chicken is really delicious and very easy too. It's in Jamie's Dinners. Basically you chuck a chicken in a pot, throw lots of veg in, leave for a few hours, fish everything out into individual bowls, then drizzle horseradish sauce over. It really is a lovely recipe which I have used many times.
