I think fajitas are good for a meal with friends and can look impressive, especially if you make the guacamole and salsa yourself

I did Meatball and Bacon Toad in the Hole last week which went down a storm with dh (quite picky , ds1 and ds2):

450g herby sausages
8 rashers of streaky bacon cut into pieces
1 large red onion cut into wedges
fresh or dried thyme
olive oil
Yorkshire pudding batter

  1. Oven 190degrees (fan) / gas 7.
  2. Slit sausages down length and remove skins. Shape each sausage into 3 balls.
  3. Put sausage balls, bacon and onion into small roasting tin and scatter thyme over. Drizzle with oil then bake for 20 mins until sausage balls are slightly brown.
  4. Pour in batter and return to over straight away for 25 mins or until the batter is well risen and crisp.

Quick and easy! Served with roated veg.
