How do I low carb my Sunday roast chicken dinner?

Only just started low carbing.

Today Ive got a chicken for lunch. Would usually have roast pots, yorkies, carrotts, peas, cauliflower and stuffing

So what can I change to make it low carb Sunday lunch?

Cauliflower cheese made with cream, cream cheese and more cheese, broccoli, sprouts, asparagus, cabbage cooked in butter.

Aubergines are low in carbs.
I grill and use them in pasta dishes for a wholesome flavor. My version of Eggplant Parmesan is good for when other people are having lasagne (grilled aubergines layered with light tomato sauce and cubed mozzarella).
Courgettes, too.

Serve exactly the same thing without the roast potatoes and Yorkshires.

Do stuffing based on nuts and fruit. Or no stuffing at all. Stick halved lemon + halved whole garlic up chicken's bum and roast it with that in instead.

Make at least half your plate veg. I might do roast chicken with roast veg - cauliflower, peppers, carrots, tomatoes, courgettes in olive oil + garlic. Could stick some new potatoes in for those who aren't low carbing.

Cauliflower cheese is a good shout. You can roast celeriac, or mash it. Delicious and makes a great accompaniment to a roast chicken. I’d do carrots and peas anyway - as long as you only have a few you’ll be fine. Use the chicken cooking juices as a jus instead of gravy.

Roast broccoli is a lovely accompaniment -
break into florets, oil and s+p, 5 -7 mins on a baking tray.

I will have the chicken make a cauliflower cheese, cabbage, brocolli and sprouts...may have 1 carrot for colour Grin

Sprouts swimming in butter, with plenty of salt! Oh my, how did I forget about sprouts?

Tip: if you use frozen broccoli and cauliflower florets it’s cheaper and they roast up beautifully without getting too crispy (I like the crispiness but sometimes I’m not in the mood).

OOOo you could make some lovely red cabbage!
My recipe is - sorte red cabbage with onions in mustard, lemon juice and a little apple juice. But I'm sure other people have better red-cabbage ideas

Best cauli cheese. This will feed 4 to 6 as a side dish for a roast.

Half a cauli. Cut into medium florets. Put in baking dish.

Clove of garlic fried in butter for a minute
Add half a tub of Philadelphia. Use the garlic and herbs philly if you like and omit the garlic stage.
Add splash of white wine and a glug of cream. Melt philly.
Add a few handfuls of any cheese you have going. Cheddar grated, crumbled feta, bit of blue, Parmesan all work well .
Bubble until custard consistency.
Pour over raw cauli
Sprinkle cheese on top
Oven for around 30 to 40 mins. It's very forgiving so any temperature over 200 and

I’d make it with twice as much cauliflower to cut down on sauce to veg ratio maybe? Remember it’s only a side to add so no need to eat loads of it if it’s rich. Tbh I wouldn’t make mine with philly (I hadn’t noticed that in there!), so maybe next time try the mascarpone instead?

I don't think there's much point in doing a 'low carb' roast dinner. The whole point is that you roast potatoes in the fat that comes off the chicken.

I think, as other poster have suggested, the best option is just to serve plenty of veg with the chicken and potatoes. Spring greens are really good steamed.

It also seems a bit weird to see all sorts of very creamy veg dishes as preferable to a roast potato to me. But then Mumsnet is a very weird place...
