How do I low carb my Sunday roast chicken dinner?

Only just started low carbing.

Today Ive got a chicken for lunch. Would usually have roast pots, yorkies, carrotts, peas, cauliflower and stuffing

So what can I change to make it low carb Sunday lunch?

There’s plenty of point! I spend a lot of my life low carbing and I still like a good roast dinner.

OP, Another good option is celeriac dauphinois. Oh my goodness I love celeriac.

Plura If you don’t understand low carbing then the creamy dishes won’t make sense to you, but it’s low carb, high fat, so you eat lots of creamy fatty things on this way of life. It’s great and is a lovely way of eating.

No, I don't understand low carbing. And eating too much creamy fatty stuff makes me feel rather sick.

There’s a nice stuffing that I use in Xmas turkey that would be good for chicken too. It’s equal quantities of unsweetened chestnut purée and soft “ready to eat” packet apricots, chopped up coarsely and mixed together with a little cumin and coriander, then packed into the carcass to roast with it and flavour the bird. There’s no breadcrumb, flour or rice in it, so the only carb is the natural sugar in the apricots.

Then I suppose you don’t need to worry about trying it, do you? Especially if you’re quite happy to have the roast potatoes!

I low carb to keep my blood sugar issues in check. It works well for me and I really enjoy it. It keeps me healthy and slim and feeling good in myself, and I get little to no period pain as well, which was a benefit I wasn’t expecting but certainly appreciate.

Im loving it!!! Only started Thursday wanting to loose weight, cook more and I can honestly say I dont feel bloated one bit as I did before whdn I had eaten bread, cereals, etc... right back to the cauliflower cheese Grin

@Plurabelle low carbing really works for me.

But if you just swap your carb calories for fat calories, it doesn't work.

You can do low carb, high fat but if you eat so much fat it replaces the carbs, you might as well not have bothered. So for example the Joe Wickes version of cauliflower cheese is masses of cauliflower, a coating of marscapone and not much cheese. So v different to standard recipe. And then he wants you to eat more other veg as well.
