I'm a vege low carber. I eat omelettes, homemade coleslaw ( don't bother with carrot anymore), swede brocolli green beans leeks Brussels all covered in low carb cheese sauce, courgette fritters etc

I have strawbs and rasps every day.

Nuts, vege hot dog sausages as snacks.

UrsulaPandress · 05/04/2019 20:17

Low carb cheese sauce? Is there a recipe please?

thenewaveragebear1983 · 05/04/2019 20:18

Today I had:
A frittata type omelette made with smoked fish, 2 eggs, single cream, spring onion and petit pois, with a cucumber salad and a blob of coleslaw
Dinner was a ribeye steak and salad and mayo.
I've also had about a tbsp of hummus and 2 seed ryvita but that's because I ran 12km, plus a bit of cheese mid afternoon, again because of post run munchies.
Later on I might have some full fat yogurt, maybe no.

I try to get under 50g carbs a day, and around 20% carbs but I'm not always successful!

thenewaveragebear1983 · 05/04/2019 20:21

Ursula I make a cheese sauce by just melting cheese into milk, however you need to watch if you mix it with anything watery (eg in a veg dish or a fish pie) because it can curdle at high heat without flour to hold it together. I use soft cheese like Philadelphia for some recipes too, but again, it can split. Doesn't affect the taste of it splits,,but it loses the creaminess/sauciness unfortunately.

UrsulaPandress · 05/04/2019 20:22

Just googled a recipe and it was cheese and heavy cream melted together! What is heavy cream? Is it double?

Overseasmom100 · 05/04/2019 20:29

Some lovely ideas here.
Ah no @TowandaForever not rude, dont worry Smile. What's in your slaw recipe?

OP posts:
LadyMonicaBaddingham · 05/04/2019 20:43

Heavy cream is more like whipping cream. IME, America doesn't 'do' proper cream ...

RedElephants · 05/04/2019 20:44

Following this, really really interesting

anotherBadAvatar · 06/04/2019 07:33

B - nothing or full fat greek yoga
L - fajita bowl salad/tuna and avocado/chicken mayo salad/cheese omlette
D - steak and spinach/saag paneer/sausages and cauli mash.

Imfinehowareyou · 07/04/2019 20:11

@anotherBadAvatar can you please share your fajita bowl salad recipe?

TowandaForever · 07/04/2019 21:31

@UrsulaPandress

Low carb cheese sauce is cream cheese, mustard, grated cheese and double cream.

TowandaForever · 07/04/2019 21:32

@thenewaveragebear1983

Milk isn't low carb is it?

Also doesnt Philadelphia have more carbs than other cream cheeses?

thenewaveragebear1983 · 07/04/2019 22:09

Tow I suppose it depends what low carb plan you follow. It's fructose that I avoid, so the small amount of lactose in milk doesn't make a huge difference to me and I aim for less than 50g carbs a day which isn't Uber low and not ketogenic, Whereas I suppose if you're going very strictly low carb on all carbs aiming to get into keto, then maybe 5g lactose is too high? It works for me.

UrsulaPandress · 08/04/2019 07:53

Thanks. I'm not sure total low carbing is for me. I've turned to the occasional crispbread.

Blood Sugar Diet and Fast800 thread 14 www.mumsnet.com/Talk/fasting_diet/3532374-blood-sugar-diet-and-fast800-thread-14

Ursula its all relative though, isn't it? you should come and check out our BSD thread. You can eat (occasional) high fibre crispbreads as part of a low carb Mediterranean style diet and still lose weight and get the benefits of the low carb lifestyle.

UrsulaPandress · 08/04/2019 19:11

BSD? I’ll have a gander.

UrsulaPandress · 08/04/2019 19:11

Oh. Blood sugar diet. Ta. I’ll check it out.

anotherBadAvatar · 10/04/2019 09:16

@Imfinehowareyou Fajita salad bowl (there are recipes out there, i just made mine up).

Fry chopped bell pepper with mince or chicken breast and add fajita seasoning. (I use Barts).

Let cool slightly while you make the salad -
I use combination of whatever I have in the fridge, so chopped cabbage, salad leaves, spinach etc.

Top with sour cream and grated cheddar cheese.

I make loads of the mince/chicken then freeze and just heat up when I want.

Imfinehowareyou · 10/04/2019 09:27

@anotherBadAvatar thank you!
