June 2025 Low Carb Bootcamp week 3

Two weeks of bootcamp and we should be well in the swing of it now.

Here is the spreadsheet for those who want to add their details.

Typically after 2 strict weeks there's the option to move to bootcamp lite (vegetarians may have already been following this version). The details are on one of the tabs on the spreadsheet. Essentially it allows the addition of a few berries (blueberries, raspberries, strawberries) which means prettybird can eat her strawberry from her water glass at the end of each day without breaking any rules Grin You can also add in a few seeds, nuts or nut products - so the almond muffins are back on the menu, or a little bit of homemade granola (Rose Elliot does a great low carb version). The carb counts for different nuts are also on the spread sheet - they vary a lot, so avoid cashews. You can also have some alcohol - clear spirits with soda, dry red/white wine, or champagne are lowest carb. No liquers, cokctails, cider or beer - all have a high sugar content.

However, with all of the above, you have to be sparing. If you have fruit and nuts and alcohol every day... well we all know where that take us!

This is only a short bootcamp, so I'm going to pretty much stay with the strict version although I'm going to stay with a friend mid-week so will go with the flow a little more then.

Also, week 3 and 4 can sometimes see a smaller weight loss as our bodies have adjusted to this way of eating, so don't be despondent if you don't feel you're making as much progress, stick with the rules, and remember to drink all the water!

Scales bobbing up and down contributed to several major wobbles I’ve had over the years. While I had plenty to lose, I stuck faithfully to the bootcamp rules and trusted, only weighed myself once a month to check I really was on point. So rewarding to see a loss every single month though my clothes had been telling me the same story all month.

hope you find what works for you.

Hi everyone - I majorly fell off the wagon and ended up in a carb binge for a week which has definitely shown on the scales…

I’m going to push the guilt aside though and get back on the horse.

I’ve decided to eat the same thing every day until I feel disciplined enough to venture out so today (and every day for the next 2 weeks) will be:

B - coffee with cream
L - omelette (with varying fillings) and veg
snack - berries
D - chicken thighs or pork chops with salad

Also going to stick to the water.

Well done to everyone who’s been working hard!! X

Beautiful 😍

Finished all my water before 6:00 pm! Gloating about that. Also exercised early this am as it headed to 30 degrees, maybe one reason why I got through all the water (and then some) on time.
Breakfast: FFGY and blueberries, small handful of walnuts
Lunch: chicken and courgettes
Dinner: Bolognese - DH can have pasta with

Also a big batch of ratatouille on the go for a dinner party tomorrow - thinking salmon, green beans, a fennel salad to start. New potatoes for the others.

Hi Bex, I don't know whether you've recently joined or whether you're a longer term low-carb person with a name change...

Good to get back on the horse.

Does that way of eating suit you? I ask because one of the things I love about this approach is that I can have so much variety. I struggle to choose between delicious recipes, and that is what makes it sustainable for me.

I know some posters have a standard set of recipes: maybe always ffgy with berries for breakfast; salad with [protein] and oily dressing for lunch; but usually there is a variety of dishes for dinner. Veg with cheese sauce; steak and broccoli; tuna with courgette / fennel / olives / tomatoes; lettuce fajitas with meat, avocado, sour cream; roast pork with loads of veg

I worry that your approach for the next two weeks is restrictive. And for some people a period of restrictive eating leads to the next binge. That is absoloutely NOT what we want.

LCHF with a great variety of meals is about constancy. It is about healthy foods, eaten with delight, and in moderation.

@Quashsquash I'd love to join your dinner party, that sounds great!

I spent a lovely evening with a friend who is mostly following Fast 800 (although she is very tall and muscular so she adds carbs to it). We had a soy salmon salad and veg bowl - a rainbow of food. Then a bit of cheese and celery. She had noodles with her salad. I had half an oatcake with my cheese Blush

Lots of walking in the sunshine - that feels good!

Thanks for the reply!

I’ve done boot camp twice before and lost 10 pounds each time. In general, I don’t eat carbs with meals - like as a house we’re not bread, pasta, rice, potato people…but I have a really bad sweet tooth!

I’ll add some variety next week but I think because I’ve got small children (one ASD so pretty rigid with food) work full time and have a lot going on, I struggle with the planning that comes with trying new recipes.

But I’ll try…I’ll make a plan for the week this weekend x

I'm having a good week. Lots of eggs, lots of salads. For dinner tonight I've made a cauliflower cheese (with shallot, fennel, spinach and a few broad beans (they were in the veg box, and I can't bear not to try at least a few). I'd forgotten how good the simple cheese sauce is: double cream, a little mustard, as much grated cheese as you can melt in it, a squeeze of lemon juice. I enjoyed finishing off what was left in the pan!

I'm back on US soil from visiting the UK. I did decide to not worry too much about bootcamp and ate what I fancied. This is a lifestyle for me and I don't know when we'll be able to visit again.
I did gain 2.8lbs, but was expecting more!

I'm back on track.
I've had my creamy coffee for breakfast (I don't eat breakfast and haven't since I switched to low carb a few years ago). I'm getting ready to make my meal plan, which will involve lots of eggs and salad.
I also need to get my water intake back up again and have already made a great start on that today. I know that makes such a big difference to me.
The fridge is empty since we left for our trip, so must make a shopping list and get some groceries in today.

Anyone else finding it easy to avoid big meals in this heat? 🥵 I almost had to force myself to have a salad for lunch because I'm not sure I'd have bothered otherwise. Plenty of water though!

I found out on Wednesday that I have a hiatus hernia which has spurred on the need to lose weight even more.

Great shout with the cauliflower cheese - I think I’ll make this with my roast dinner on Sunday…

Any other roast dinner style add ons? Maybe a good bread-less stuffing recipe?

Today so far has been:

B - coffee and cream
L - feta, bacon and sundried tomato omelette.
D - will be Pork chops with vegetable ratatouille (originally made to be blended for the baby but tasted good enough to eat myself)!

And yup agreed - so much easier in the summer!

Just4June · 20/06/2025 17:28

One Christmas I made stuffing with sausagemeat, cauliflower rice, herbs and nuts. Cooked with rashers of bacon on top so all the bacon fat went into the stuffing.

Made a really nice dinner tonight ( DH had been out all day ,I’d had a loooovely day on my own , been for a walk , went to the church fête , sat in the sun , dodged a hail storm … typical Welsh summer )
So , sliced up some chicken breasts , sautéed in olive oil and butter , added onion , carrot , courgettes , mushrooms and cauliflower florets ,popped in the oven with some seasoning , added a stack cube and cooked for 30 mins or so
Used some double cream to make a sauce and it was delicious ( DH had some potato wedges )
Even better , we ate dinner outside !

Just4June · 21/06/2025 22:37

@JumpingintoJune oh what a perfect day...
