@AllTheBlackCoffee and @recklessgran - at one time I was tested for under active thyroid and while the results were "normal"
, but only just, ever since then I've had two Brazil nuts a day, for the selenium, which is supposed to help. Although it's no substitute for medication
. Fortunately I'm not really keen on Brazil nuts so it's not a gateway food for me

. No need to be on the Spreadsheet but if you go to it, you will find on the tabs The Rules and also various resources that explain this WoE.
Someone has already explained STS but I'll go through the rest of your questions.
- Flaxseeds (indeed nuts and seeds of any kind) shouldn't be eaten for the 1st 2 weeks and thereafter only in moderation. It's very easy to get carb creep from the nuts. This is to help you get into this WoE (Way of Eating) and to learn to only eat when you're hungry (it's very easy to "overdose" on nuts )
- This WoE is not so much about being in ketosis as becoming ketogenically adapted. The amount of water you should be drinking would mean that ketostix wouldn't necessarily show much. You'll tell when you've become ketogenically adapted when you stop feeling hungry all the time as your insulin and grehlin are more in balance.
- It is possible to eat too much fat BUT that is usually only an issue when you are getting close to target. And as you've said you've got c3 stone to lose, that's not relevant. In fact, you need to eat the fat to make this WoE work!
In simplistic terms, you need to be eating enough fat for your body to think that it doesn't need to store that fat and can use it for energy instead. Plus fat is satisfying and satiating, so you'll find that it helps you not be hungry.
I suspect if you're still feeling hungry, you're still having too many carbs and/or not having enough fat. One of The Rules of this WoE is to eat if you're hungry - as long as it's HFLC of course 
I rarely make pork scratchings - most of us buy them
In fact, I suspect most of us have converted to puffed pork scratchings which are less likely to break your teeth
I do occasionally make pork cracking if I roast a joint of pork.
The problem with too much bacon & sausages is indeed the additives. We're trying to eat more cleanly on this WoE. (But I'll admit to relying a bit too much on salami as a snack
)
As the "inventor" of shoogled sprouts (ok, the creator of the description
), I've never actually tried doing them with frozen sprouts. I would imagine it's just a case of adapting the timing.
Why not write down what you've been eating the last few days and we can see if we can make any suggestions.
