Asparagus Frittata (serves 2)

250g/9oz asparagus, trimmed and cut into 5cm/2in pieces
4 eggs
4 tablespoons freshly grated Parmesan or Pecorino cheese
225g/8oz spring onions, finely chopped
2 tablespoons olive oil

  • Cook asparagus in boiling water until tender (7-10 minutes)
  • Whisk the eggs and add the cheese and the spring onions
  • Pre-heat the grill
  • Heat the oil in a large frying pan that can go under the grill
  • Put in the asparagus; stir-fry for a minute, then pour in the eaten eggs, moving the asparagus around gently to make sure the egg mixture gets right through, and that the grated cheese is well distributed
  • Let the frittata cook over a moderate heat for a few minutes until the underside is cooked and lightly browned, then put the pan under a hot grill for a minute or two until the top is set and golden brown

5.5g carbs per serving

Hello everyone

As it's nearly Burns night I thought I'd share my laahvely swede recipe Smile. This is the closest thing to mash potato that I've found, but it's not just a 'pretendy' food, it's blooming delicious in its own right.

Eat hot from the oven with a spoon, or as a side dish, or what I do is cook off a biggish batch then cover it and keep it in the fridge- take a scoop and zap it in the microwave to add to my meal.

It's also very handy for when you want a gravy- a tablespoon or so added to a little meat juices and/or stock thickens it up nicely.

Mashed Swede Bake

1 swede, peeled and chopped into chunks
2 Tbsp butter
2 Tbsp philly or other generic full fat soft cheese
Salt and pepper
1 Tbsp grated Parmesan (if desired)

Boil the swede chunks in salted water until soft, then drain and crush with a potato masher. Add in the butter, soft cheese and salt and pepper, and then blitz together to get a soft, creamy texture (I use a stick blender)
Transfer to an oven proof dish, and lightly score the top with a fork. Sprinkle grated parmesan over and bake in the oven at 190ish for 20 minutes or so, until the top is nicely browned with crispy bits.

Comes in at around 4.5g per serving.

Starrystarrynight's Cheese Crackers

120g ground almonds
120g milled flaxseed
1 tsp baking powder
1/2 tsp salt
50g grated cheddar cheese, plus some extra for sprinkling
1/4 tsp chilli flakes
30g melted butter
1 egg
sea salt for sprinkling

Preheat oven to 150C

Put all ingredients into a food processor and blitz till it forms a dough. (It will be a little bit crumbly)

Cut two square of baking paper the size of a large baking sheet. Put the dough on top of one of them, squash down into a flattish rectangle. Cover with the other sheet, then roll out thinly, lifting the paper occasionally to check the shape is fairly uniform. Aim to roll it out to the thickness of a Ryvita

Remove the top layer of paer, and score it with a knife into rectangular cracker shapes, whatever size you want.

Sprinkle with the extra cheese and sea salt, then bake for around 45 mins until brown

Leave to cool on the baking sheet then carefully break along the marked lines. They are crisp once completely cool and are robust enough to take toppings without falling apart.

Total carb count is 20g.

Elbom......blitz cauli either grating it or in the processor.

Fry with butter in a pan with whatever spices you fancy. I like it with just salt and butter.

Dh made a risotto with it the other day. GrinGrin

I've just been to Morrisons and bought a shin of beef?? What now? I haven't got a slow cooker but plenty of casserole dishes. I need to cook for work. Any ideas? I've also got a bag of kale. Never tried it in my life. It's so exciting!

Ahem, Calzone?! What can we help you with?!

Lighthousekeeping - start it off on the hob (browning the meat/veg), then add whatever liquid you're using, and bung in the oven on about 150-170 for at least two hours.

Here Pistey:

Chilli - serves one - 7g carbs per portion

100g steak mince
75g shallots, chopped (about 3 or 4 round ones)
85g mushrooms, chopped
1 chilli, de-seeded if you don't like it too hot, chopped
2 cloves of garlic, crushed
100g chopped tomatoes (I used Sainsbury's Basics, from the tetrapak carton)
salt/pepper, dried oregano, fresh coriander, olive oil

Heat olive oil, and gently fry shallot, chilli and garlic till softened; season with salt, pepper and oregano
Turn the heat up and add the mince, stir until all the pink has gone
Add the mushrooms and cook for around a minute or so
Add the tomatoes, stir, and then simmer with the lid on the pan for around 30 minutes. (Keep checking it - you may need to add water to stop it getting too dry/burning)
Just before serving, add freshly chopped coriander.

A bit late for pistey but I do my chilli in the slow cooker and add a cubed ball of mozarella to increse the fat content.

Not a recipe, more of a suggestion:

Sausages and roasted veg

Brown sausages in a frying pan (low carb ones, obviously!) and throw them into a roasting dish.

Add to the dish any low carb veg that you happen to have:

shallots
cauliflower
leeks
courgettes
a couple of peppers (not quite so low carb but you don't need much - half a pepper per person?)
chuck in a handful of garlic cloves (you don't need to peel them

season with sea salt and black pepper and, if you like, some dried chilli flakes and then drizzle generously with olive oil

Roast for around 30-40 mins (stir it all around after about 15-20 mins) until everything is cooked/slightly charred.

Easy peasy!
