What do you have for quick and easy lunches?

I'm good at evening meals but always seem to flounder when it comes to throwing a quick but healthy lunch together. in summer it's salad and cheese I suppose, but what in winter?

What have you had for lunch this week? (I'm a SAHM by the way, so catering for me and dd during the week and then for dp too at weekends.)

hiya,
We have a lot of pasta- pesto pasta with sweetcorn, scrambled egg and baked beans, my ds loves toasted sandwiches (18 months), egg fried rice with veg.
Try not to do frozen fish fingers much- but if i get really stuck or boared i cant lie i do!
My dd(3 next week!) loves to help make fresh pizza- we use pitta bread and grill it (just like cheee on toast really!).

Jacket potatoes/wedges
Wraps often with humous, chicken, tomato & leaves whatever's in the fridge
Soup
I don't like sandwiches, so I also struggle with lunch.

oh- same as me SAHM- only really started on nm recently and still trying to get the abreviations (used dd and ds for the first time in this thread- after it took me about a month to realise what it meant!)
I have great fun with myself trying to figure out what they all stand for!

Anything with eggs - eggy breat, poached egg, boiled egg, omlette, et.

Soup or leftovers during the week when DD not at nursery
On Saturdays I throw together a stirfry (quick and easy) ... trying to change my habits though and today am making couscous and med veg for lunch
If we're around on Sundays DH always makes a roast

Looking for lunch inspiration too as DH complains about my predictability

What are Falafels? Are they suitable for a 14 month old? How do you cook them? What do you serve them with?

Will be watching this with interest as I'm often a bit stuck for lunches. We end up having cream cheese sandwiches rather a lot

Don't do soup, and don't want to offer eggs too often. Pasta and rice are more evening meal things with us.

One of ds's favourite lunches is grated carrot and cheese tortillas (folded up closed and then dry-fried), which take about 5mins to make and despite the bizarre-sounding filling are actually v. tasty.

Jackets, scrambled or poached egg, toasties, pancakes with cream, garlic and mushrooms [drooling now], avocado and cottage cheese mashed on pitta with sprouts [if feeling rich] frozen fish fillet poached in milk for 5 mins then pesto and cheese in milk for sauce [if feeling poor], pesto pasta.

Also frozen mash with cheese and beans.

Starving now.

Might have to write these down as never seem to be able to come up with this list when I'm stood looking at the fridge!

Thornyrose, falafel are chickpea patties/balls which are originally from the Middle East. They are usually on the spicy side, served in pitta bread with salad.

I haven't had them for ages so thanks to COV for reminding me.

Instant noodles
Cheese and crackers
Bagels with salmon and cream cheese (parma ham works well too)

Winter weekends we sometimes have a brunch, eg

Smoked mackerel (grilled) and scrambled eggs (or just poached with brown bread and butter)

Egg and bacon (variations include mushrooms, halloumi, tomatoes)

treedelivery- like the sound of avocado mashed with cottage cheese on pitts bread with sprouts (mine dont eat sproputs) but will try it tommorrow with sweetcorn!

loads of great ideas here...
we have eggy bread, wraps, scrambled egg and soups really but getting v bored.
does anyone make their own hummous?...is it easy? I love it but its not readily available where i am. any recipes or tips would be fab
