What do you have for quick and easy lunches?

I'm good at evening meals but always seem to flounder when it comes to throwing a quick but healthy lunch together. in summer it's salad and cheese I suppose, but what in winter?

What have you had for lunch this week? (I'm a SAHM by the way, so catering for me and dd during the week and then for dp too at weekends.)

Loads of ideas on here....but none of us will remember them at lunch time, so we'll just log on to get inspired, get side tracked, forget lunch, dc's will starve.....I can see it all.

I gave dd sardines and sweetcorn, both out a tin yesterday. Totally instant and very healthy! She guzzled them down.

I think it's the bread thing that stumps me. I can't be doing with too much bread but everything else takes time to cook.

only salty in the way that fish is. no added salt. very nutritious. dd always smells a bit fishy afterwards though...

Where are you costababe, if you don't mind me asking? I have made my own hoummous but i didn't like it as much as the shop bought one

sardines (in tomato sauce) on toast
pate on toast
peanut butter on toast
cheese and/or beans on toast
hummous on toast
soft cheese on toast
cream cheese on toast
scrambled eggs on toast
smoked salmon sandwiches ( not on toast])

My staple lunch - if dcs have eaten earlier - is linguine with prawns, chilli, garlic (10 mins start to finish).

I don't get on with soup. If I have it for lunch, even with lots of bread, I'm ravenous and wobbly by 3pm, and then eat lots of rubbish.
