That don't cost the earth. Mine are as sharp as a dinner knife and I've had enough.

I've got Globals, which aren't cheap but will last forever.

You can generally get a good deal on them as they're often on sale.

JerkintheMerkin · 05/02/2023 10:15

@Babymamaroon thanks but those are a bit out of my price range. I'm not a great cook and hate cooking so those would be wasted on me.

If it's a genera l veg knife you're after, I recently bought one off Amazon that was cheap and razor sharp.

JerkintheMerkin · 05/02/2023 10:20

@FenghuangHoyan yes, that's what I'm looking for rather than a whole array most of which I'd never use. Say a set of 3-5.

Here you go. Be warned, they are very sharp and go through an unwary finger with ease:. www.amazon.co.uk/gp/aw/d/B0050DIPU4?psc=1&ref=ppx_pop_mob_b_asin_title

@FenghuangHoyan thanks. Will have a look now.

just got a couple of small Victorinox for peeling etc, after being impressed with them at friend's house. About £5 each and excellent.

NocturnalClocks · 05/02/2023 11:24

Global knives are the best by far. You'll never have to replace them again.

NocturnalClocks · 05/02/2023 11:25

They are expensive but worth it. Even if you just buy one or two at first.

These really are the best. Value price & amazingly sharp.

BlackForestCake · 08/02/2023 01:29

TK Maxx usually have decent knives cheap.

HerNameIsIncontinentiaButtocks · 08/02/2023 01:49

Knives don't stay sharp magically. They need a bit of maintenance. Even the fanciest of blades will be blunt as a butterknife again in three years.

Serrated blades are arses to sharpen. Get two or three decent quality straight blades and a sharpener, use the sharpener every week or so on each blade for half a minute each and you'll have sharp knives forever.

Thanks for the post OP. You sound like me. I don't want serrated though. Watching with interest.

Monty27 · 08/02/2023 05:18

Just ordered these after @FenghuangHoyan posted www.amazon.co.uk/gp/aw/d/B0012MBCKC/ref=ya_aw_od_pi?ie=UTF8&psc=1

borntobequiet · 08/02/2023 05:28

Get a knife sharpener and use it regularly.

Userusing1 · 08/02/2023 05:34

As PPs said, those Victorinox knives are a good buy if you want small knives, I have all different kinds, they all go into the dishwasher as well

ThisGirlNever · 09/02/2023 14:11

I'll go against the grain. I've got some Global knives and I'm not really that impressed. Japanese knives are made from harder steel and are shipped with a sharper blade than European knives. The problem is, a knife is only as sharp as you can keep it and Global knives are harder to sharpen.

I've got a Wusthoff chef's knife and it is sharp - I've used it to cut through lamb leg bones before. I got mine at half price from Amazon 14 years ago and it's still great - easy to sharpen and hone.

If Wusthoff is out of your price range, I'd go with Victorinox

We've had a set of Globals since I think 2006, two have chipped mid blade in that time. The first we got them to swap it but they were so anti doing it I didn't bother the second time.
Stainless is harder than carbon steel so sharpening can be a chore. A friend recently showed me his knife sharpener which is a Worksharp Guided Field sharpener which has a coarse and fine diamond faced sides, as well as a ceramic edge and then a leather piece for uber sharpness. The two yellow plastic wedges on each end are rests for the blade before each stroke to set you off at 20 degrees. That help plus the diamond works on my stainless blades much easier than anything I've tried before. There's also a little ceramic area for serated edges too. Not too small, not complicated, should be long lasting and I think works well :)

Another vote for Global. I know they’re expensive but I’d just start off with one. There’s a reason that lots of chefs use them but at the same time they’d definitely not be wasted on you- I think cooking is so much more enjoyable when you’re using decent knives and you don’t need to be a chef/really accomplished cook to feel the benefit of that. They are worlds apart from my much cheaper (but still not super cheap) knives.

Only thing is that they spoil you- if you ever stay at someone else’s house or a self catering place you realise how crap a lot of knives are.

chloechloe · 14/02/2023 20:20

I would just get one knife and spend more money on it. I would recommend Global too. You can buy a sharpener which holds the knife at the correct angle.

The most important thing though, whichever knife you have, is to never ever ever ever put it in the dishwasher. It will blunt the blade with time, so hand wash only!

DiDonk · 14/02/2023 20:29

We use those little victorinox for small stuff, have a butchers knife from a catering shop for big stuff, and a japanesey cleaver for everything else. The butchers knife was about 35 EUR, use it all the time, sharpen it often with a steel. It took me ages to feel comfortable doing it like that but it's great fun.

Whatever you pick you'll have to learn to sharpen, doesn't matter how much you pay, it'll lose its edge eventually.

RoseValleyRambles · 14/02/2023 20:31

Victorinox are excellent, and they dishwash!

Ihaveawonderfulpartner · 14/02/2023 20:34

We've got some ceramic knives and you can pick them up all over the place, even supermarkets. They are sharp as anything and don't need upkeep. Perfect for an everyday cook who just wants a sharp blade without cost/maintenance.

PrincessW11 · 14/02/2023 21:11

Another vote for Wusthof, got a set of 5 knives in a block in Harrods sale over a decade ago, still going strong

Baaaaaa · 14/02/2023 21:35

I really rate the victorianox knives. Cheap and super sharp. Particularly the tomato knives. Just very functional.
