Recommendation for sharp kitchen knives

That don't cost the earth. Mine are as sharp as a dinner knife and I've had enough.

Over the years, I have come to the conclusion that a couple of mid priced (not ceramic) knives and learning to sharpen is the way forward.

I have five knives on the wall - one Global, two Ikea, a Sabatier and a bread knife from Amazon. Every Saturday morning, I sharpen them all on a whetstone - using techniques picked up from a few YouTube videos. They are all sharp enough to slice a tomato, and it takes minutes.

Spend £10 on an AnySharp & you can use your existing knives.

Wusthof Classic. I think this is their middle range, they also have an entry level range (not nearly as good) or a super expensive range.

I love mine. Really just need two small knives and a chef’s knife. I put them in the dishwasher (have a tray not a basket which helps) and have never sharpened them - guess I may need to after a few more years but going strong so far.

I don’t like the feel of Global knives, I don’t like the straightness of the handle shape and they feel too lightweight to me. It’s personal preference.

Be wary of buying a set - check it has the sizes you actually want. I bought a Wusthof set of 3 which had an odd mid sized knife in it, we hardly use it, would have been better to just buy the 2 I wanted.

I've had a set of Sabatier knives since 1994 and they're still perfect... use a stone to sharpen occasionally. I think it was 60 quid then for 5 in a block.

I really rate the victorianox knives. Cheap and super sharp. Particularly the tomato knives. Just very functional.

We've got some ceramic knives and you can pick them up all over the place, even supermarkets. They are sharp as anything and don't need upkeep. Perfect for an everyday cook who just wants a sharp blade without cost/maintenance.

We use those little victorinox for small stuff, have a butchers knife from a catering shop for big stuff, and a japanesey cleaver for everything else. The butchers knife was about 35 EUR, use it all the time, sharpen it often with a steel. It took me ages to feel comfortable doing it like that but it's great fun.

Whatever you pick you'll have to learn to sharpen, doesn't matter how much you pay, it'll lose its edge eventually.

I would just get one knife and spend more money on it. I would recommend Global too. You can buy a sharpener which holds the knife at the correct angle.

The most important thing though, whichever knife you have, is to never ever ever ever put it in the dishwasher. It will blunt the blade with time, so hand wash only!

Another vote for Global. I know they’re expensive but I’d just start off with one. There’s a reason that lots of chefs use them but at the same time they’d definitely not be wasted on you- I think cooking is so much more enjoyable when you’re using decent knives and you don’t need to be a chef/really accomplished cook to feel the benefit of that. They are worlds apart from my much cheaper (but still not super cheap) knives.

Only thing is that they spoil you- if you ever stay at someone else’s house or a self catering place you realise how crap a lot of knives are.

We've had a set of Globals since I think 2006, two have chipped mid blade in that time. The first we got them to swap it but they were so anti doing it I didn't bother the second time.
Stainless is harder than carbon steel so sharpening can be a chore. A friend recently showed me his knife sharpener which is a Worksharp Guided Field sharpener which has a coarse and fine diamond faced sides, as well as a ceramic edge and then a leather piece for uber sharpness. The two yellow plastic wedges on each end are rests for the blade before each stroke to set you off at 20 degrees. That help plus the diamond works on my stainless blades much easier than anything I've tried before. There's also a little ceramic area for serated edges too. Not too small, not complicated, should be long lasting and I think works well :)

I'll go against the grain. I've got some Global knives and I'm not really that impressed. Japanese knives are made from harder steel and are shipped with a sharper blade than European knives. The problem is, a knife is only as sharp as you can keep it and Global knives are harder to sharpen.

I've got a Wusthoff chef's knife and it is sharp - I've used it to cut through lamb leg bones before. I got mine at half price from Amazon 14 years ago and it's still great - easy to sharpen and hone.

If Wusthoff is out of your price range, I'd go with Victorinox

As PPs said, those Victorinox knives are a good buy if you want small knives, I have all different kinds, they all go into the dishwasher as well

Knives don't stay sharp magically. They need a bit of maintenance. Even the fanciest of blades will be blunt as a butterknife again in three years.

Serrated blades are arses to sharpen. Get two or three decent quality straight blades and a sharpener, use the sharpener every week or so on each blade for half a minute each and you'll have sharp knives forever.
