Easiest canapés that can be eaten cold?

Only hosting 8 or so, so I don’t want loads but what canapés are the easiest and nicest to make? I have never done them before so not sure what to do? I have seen some are made from slicing up French stick?? I have seen I can buy bilinis… but don’t know what to put on top? Will be pushed for time so needs to be able to put it all together and put in fridge?

do you mean you want meat and fish options or you don't?

@5zeds I meant that because I don’t eat fish or meat I don’t know what things work together as I don’t know what they taste like…. So I will take my suggestions for toppings for the stuff/bases/cases

  • I was also going to suggest a salmon option. Crackers such as cream crackers, water crackers or similar savoury ones. Spread cream cheese on top. Buy smoked salmon and cut pieces to fit the cracker. A slight overhang or double layer of salmon is fine. Another, tiny dollop of cream cheese and sprinkle some capers and dill over the top. Squeeze of lemon over the top is also nice.
  • Loaf of bread. Cut the crusts off. Lightly compress each slice with a rolling pin or heavy glass. Melt butter or veg oil and brush onto both sides of the bread. Push bread into cup cake tin and bake for about 10mins till golden and crispy. These little cups can be made a day or 2 ahead if stored in an airtight container.
  • Use the little bread cases with various fillings instead of a vol-u-vent case. They fit more in than a tiny vol-u-vent too! If you eat eggs, I'd make mini quiches in them and serve cold.

the blinis only take 5 mins in the oven, leave to cool for 15 mins then put a blob of creme fresh and some smoked salmon on top, really quick and easy

Prawns are an excellent topper
Plus garlic mayonnaise or pink mayonnaise or a Far Eastern style
Same with cold chicken which you can just buy a few slices of

Tesco do mini tartlet cases you can just fill and Waitrose do get croustade cases. Bigger supermarkets and M&S should do salmon mousse, I know around Christmas they do salmon bites but not sure for the rest of the year!

Waitrose do the lump fish caviar at 4.50, but be aware that a little goes a long way.

You could fill the cases with anything but the pink salmon does look nice on a buffet table!
