Long weekend in Amsterdam - any specific recommendations?

We've been before, but a long time ago. Guide book is almost 20 years old, so not exactly topical!

DS2 has recommended Lucius restaurant, and I want to go to the Van Gogh museum - but anything else you'd recommend?

Weather forecast for the first day is cloudy/showery, but the other days won't be rainy.

Just DH and I - no DC to worry about!

Obligatory boat trip!

Rijksmuseum.

Begijnhof (an old convent hidden away in the city centre.

Winkel 43, Noordermarkt - great apple pie.

Jordaan district. Old working class area. Very chilled. Lots of good bars/cafes.

Pata Negra, Utrechtsestraat - tapas. Very lively/crowded.

Tujuh Maret - Indonesian food.

Just wander around. Amsterdam is so beautiful.

Avoid taxis from the airport. SO expensive!

get the train from the airport so much easier.

Go to a little cafe called bagel and beans they are dotted around everywhere. It was the best bagel of my life!

Anne Frank Museum but go early.. Also Westerkerk Tower'
A friend suggested this to me. Very close to AF house and amazing views of the city!

We're actually getting the train there, so no need to worry about the taxis!

If you are there on a Saturday go to the zoo. They are open late and have live music with food and drink available. It's all very casual and very lovely. Plus it is nice and quiet for going to look round the animals.

I also enjoyed the Hermitage. It is so much quieter than the other museums and it is in a very interesting building.

For eating I recommend Pastini. Lovely relaxed Italian food.

Jordaan markets
In the Jordaan you can visit different types of markets. Every Monday till 13:00 there is a flea market at the Noordermarkt. It is the perfect place to buy old-fashioned Dutch plates, pots and linen. There are also many stalls selling clothes and leather accessories. To find the best treasures, make sure you are early!
For food you can go to the Lindenmarkt at the Lindengracht on Saturdays, or to the market on the Westerstraat on Mondays. Every Saturday there is a biological food market at the Noordermarkt.

In addition to what's been mentioned:

The Catholic church hidden in a house - Our Lord in the Attic. Amazing!

The Rembrandt museum was great, as was the Stedilijk. Both are possibly a little geared to art lovers though.

There was a fab street market close to the Rembrandt.

We rented bikes and rode along the Amstel and out of town.

You might want to try the avocado restaurant, although when we walked past the queue was coming out of the door!

If you like steak, have a meal at Loetje!

If you want to see the Red Light District, as many other tourists do, try to avoid it after dark. Recently it has basically become an area where the police has no say after dusk.

As @lalafafa mentioned Hema is great for kids presents. Also if you want some nice Dutch cheese to take home and their clothes for kids and women are also great, nice quality in general and inexpensive. And they are famous for the typical Dutch rookworst (smoked sausage).
