Do you serve anything with risotto?

Probably a bit of a thick question, but I am trying to expand my menu! It seems to be the same thing over and over, I'm quite a good cook just a bit uninspired.

So I thought I would try an oven baked risotto. The only thing is, I know my hubby will look at it and ask what else there is. So do I put some nice bread with it or something or just tell him knickers?

Often do risotto but wouldn't bother with oven baked. It is dead easy the "proper" way. Doesn't really need anything but you could do a salad. Nice bread always goes well. Make sure risotto is properly sloppy!

I thought the "proper" way was a pain? Hmm, will have a look for a nice recipe and try it on the hob then. I'm trying to use up last years bacon before we get more pigs so was thinking bacon and mushroom.

I think I will put a salad with it. Thinking about my waist line and his moobs!

I often do a mushroom risotto which DH loves but apparently it needs meat to make it a complete meal so I roast some chicken thighs or pork fillet for him to have with it.

I did bread, but I think it would go really well with salad - but I'd been chopping and stirring all afternoon, no way was I doing more chopping!

Actually that's a lie, it was fairly easy, quick to prepare then 20minsish to cook. But I have a demanding toddler and a velcro baby.

we do tend to have alot of bread. When I do carbonara we manage to devour a whole ciabatta between the 5 of us aswell!

Stove top bacon & mushoom risotto with salad and possibly a tiny glass of wine it is then.

yep just salad with risotto usually.

can't imagine having bread with it... it is SO filling (well it is if you double the portions like me [greedy emoticon])

clearly not a Masterchef watcher or you'd know that serving anything with a risotto is sacrilege (apart from booze, obv)

no, sorry I don't watch Masterchef. It seems to be on constantly at the moment though doesn't it? I'm waiting for a call off them!

Mmmmm, I craving risotto now. But we have boring cheap bolognaise for tea!

My DH also doesn't really consider a meal as complete without meat!

Butternut squash risotto is lovely. My only problem with risotto is that it doesn't keep well. If I'm going to spend that much effort on a meal I like it to be something I can make 2 meals out of

I usually serve some rocket/watercress salad with our risotto - it's far too rich and filling for anything else!

I do a green salad with it, no bread as I think that's a bit heavy for my already huge thighs.

I really like Delia's carbonara risotto which is done in the oven.

can someone tell me the secret to making a good risotto - I tried it once about 7 years ago and it was dreadful.

If I do a vegetable or mushroom risotto I do not do anything (or just a salad)with it but when I do a saffron one, because just rice, even with a fantastic flavour is not quite a meal IMO, I usually have saussages or something with it (+salad).

Nothing to be served with risotto.

I do toast some pine nuts to sprinkle on top though.

Mind the salt though. If the stock you use is salty then don't add any extra.
If I don't have any homemade unsalted stock, I use half a stock cube made up with water, and still skip the extra as the other ingredients are quite salty.
You may want to cut this further if you have young kids.

It's bloody lovely though!

Extra butter and parmesan

I make this one regularly www.jamieoliver.com/recipes/risotto/cauliflower-risotto-risotto-ai-cavolfior. I know cauliflower doesn't sound the most appetising but something about hot sloppy risotto and chilli spiked crunchy bits on top make it work.... (think it stops it feeling like you are eating baby mush)

Did it with broccoli too and was lush....

I do an asparagus/leek risotto- doesn't need anything else but wine and parmesan for me,and for my son a veggie burger on the side (we're veggies btw)to boost his protein levels-he is 12 and growing, but def. not any more carbs as in potatoes or bread.
