I'm tempted to say mature cheddar as it's so versatile.

But oh god

What about Buffalo Mozzarella

and Brie
and Manchego

A slightly boring choice but a nice mature cheddar probably.

But lurve all cheese - mmm Goats Cheese and figs, swiss cheese, Mozzarella (with tomato and basil salad)- are all coming to mind.

My DD has already adopted the family cheese obsession. When her dinner is served, minus cheese, she just looks up questioningly and says 'but where is the cheese?'

My favourite cheese is stilton, but would have to go for Cheddar for its versatility. Couldn't we just choose one for everday, and one for best ?

Difficult. Favourite is Roquefort, but not always suitable on all occasions - a mature cheddar definitely more versatile. Sainsbury's do a really good Canadian cheddar, that is so smooth but has a fabulous flavour.
