we had roast chicken yesterday, so I will do pea and chicken risotto tueday. Todya I had prok casserole at my dads - I find eating out at dads helps with the planning

dd2 had a jkt potato for tea with beans and cheese and I had a chicken club sandwhich

wednesday will be chicken curry and thursday my ex mil is coming for tea - I am kind and don't roast her but we will be eating soemthing really very well cooked in the mince line - probably my very best homemade shepards pie with green vegtables and a pudding I have yet to work out. Probably upside down pear sponge as there are a lot of jucie pears in the bowl.

friday I think will have to be pasta, I have a tuna and tommy sauce for pasta in the fridge. and left over pudidng for after swimming

not really very exciting apart from the shepards pie which is lovely and has cinnamon in it

Share your Shep pie recipe with me Ivy. Mine is always dull as dishwater. Without chucking more salt in it, I don't know how to improve it.

gently cook the onions - whilst your faffing cutting up the carrots, about two carrots into tiny peices.

pop the carrots in with the onions and let cook gently for a while, whilst you sort out the mince.

You need a pound of mince meat - tip it in the pan and with a wooden sppon break it down and kleep doing this so it doesn't go stringy.

let the meat brown all over - then boil kettle and make stock 10 floz and mix into the stock two tablespoons of tommy puree - it must be puree. and mix it well.

season the mince with salt pepper and cinnomon about half a teaspoon.

then sprinle a tablespoon of plain flour over the mince if there is still visable fat I sprinkle some more.

Now pour over the stock and give it all a good mix with the wooden spoon.

let it simmer for about 10 mins and then put in the dish you have for pie.

spread mash pots over the top

I have taken to making homemade onion gravy aswell - chop an onion and add that and sugar to the pan and let it cook really slowly for about 15 mins - then sprinke flour over and soem worcester sauce and a pint of stock and let it simmer for 45 minutes - add sage if you like it.

We had roast chick yesterday so tonight was leftovers in a risotto.

Tomorrow some sort of chorizo pasta
Wednesday lamb burgers from butcher, probably with couscous concoction
Thursday (cubs night) DS1 M&S macaroni cheese grown ups last Saturday night's defrosted chillie
Friday. I'm out, the rest of them will almost certainly have fish n' chps.

I have to go food shopping tomorrow and have no idea what to cook for the week. Inspiration is always hard to come by.

Last night- chickpea and roasted vegetable couscous (was yumy if i say so myself...)

Out at Pizza express tonight

Tomorrow- Vegetable biryani

Thurs- Lasagne

Fri- My works christmas do!

Sat- chickpea, spinach and potato curry

Sunday- sausage and sweet potato bake

Last night: Roasted haddock, sweet potato souffle and steamed greens.

Tonight: Chilli con carne with brown rice.

Tomorrow: Butternut squash, st. agur and sage rigatoni.

Thurs: Prune, cider and pork casserole with brown rice.

Friday: Courgette and blue cheese tortilla and sauteed spinach.

Weekends are always play it by ear jobbies, but usually consist of leftover veg soup for lunch and pizza on either Sat or Sun night - my night off cooking!

Wednesday - easy-peasy fish pie
Thursday - sausages/peas/mash
Friday - shep pie
Sat - out
Sunday - scrambled eggs and toast.

Shopping day is Wednesday for me.
This week:

Weds: Tuna pasta bake. Garlic bread.
Thurs: Ham, cheese, mushroom ommelette. Wedges. Beans.
Fri: Sweet and sour chicken. Egg fried rice.
Sat: Lasagne. Salad.
Sun: Roast chicken. Roast potatoes and parsnips, sprouts, carrots.
Mon: Chicken, leek, potato soup, from leftover roast chicken and stock. Homemade rolls.
Tues: Sausages, jacket spud, beans, fried onions.

JaneiteMightBite - it's my proudest recipe invention as it is delish and vvv moreish.

For 2 people, roast half a butternut squash until it's really squishy.

Meanwhile, cook rigatoni (or another chunky pasta) and reserve a little of the cooking water.

Scoop out the flesh of the squash and blend it together with half a packet of St. Agur, a large dollop of creme fraiche and a few chopped sage leaves.

Mix it together with the pasta and reserved liquid and season with pepper. You shouldn't need salt as the cheese provides that. Enjoy!

Off the top of my head -

Onion, bacon and potato hotpot.

Make a cheese sauce.
Grease a baking dish.
Layer thinly sliced potatoes, sliced onions and bacon. Repeat.
Pour over cheese sauce.
Cover with buttered foil.
1 hour at 200C.
Remove foil.
30-45 minuutes at 180.
Eat.
