might seem obvious, but any particular soft cheese? I have some mascarpone, is that ok for cheesecake? I've never made one before.

This one is to die for, Choc and Baileys cheesecake.

11 digestives and 1.5oz butter for base.

Topping:
250 g Dark chocolate
100 g Icing sugar
350 g Full fat soft cheese
450 ml Double cream
40 ml Baileys

Melt the chocolate over a pan of simmering water. Meanwhile heat the icing sugar and cream cheese together until smooth and then fold in the whipped cream. Remove from the heat and fold this mixture in to the melted chocolate and add the baileys Irish cream.

Chill for 2 hours in the fridge to set.

It'll break the bank and ruin your waistline but soooooo worth it!

Oh, and use a deep tin to make it in cos there's a lot of topping.

this one I have made twice and it's fab - very light and refreshing...I substitute stem ginger cookies for the choc chip ones in the recipe as the bits of ginger really go well,plus add a bit of bite to the base..

Like the sound of the baileys one Knitter- I notice it doesnt have any gelatine in- does it set ok?

It sets fine, I'm veggie so no gelatine for me. I've made it twice, and 2 friends who ate it and asked for the recipe made it too. If it's left out of the fridge foe ages and gets a bit warm it does melt a bit though! To be honest it's that yummy it won't last long enough to melt.
