Things to do with bananas

We bought a bargainous bag of bananas from the market this weekend and I have about 10 left. DH and I have only really started eating bananas since DS (10mo) started eating them so I don't know what to do with them apart from peel them!

The only recipes I can find contain either nuts or alcohol. Def don't want DS to have alcohol and would prefer not nuts. Any other bright ideas? Happy to use lots of spices or flavourings, and we do eggs, wheat etc. I don't mind DS having a little bit of sugar now he's 10.5mo - not had any before but happy to give him a little treat - but would prefer it if it's nothing too sweet.

Banana bread or banana loaf (pop in a cooking apple and honey).
Banana ice cream - where you mash it up and freeze it?

Banana smoothies, chuck in blender with some milk, and if you're feeling posh some icecream. Yum!

This is the best banana bread I've ever made - I swapped the walnuts for sultanas but choc chips would also be nice. But, well, it is extremely sweet.

Mashed banana with a sprinkle of brown sugar was my favourite pudding as a child.

Bananas are also a smoothie essential of course

Any banana bread recipes - I found one in a Nigella book but it had both rum and walnuts!

Ah, pancakes: he loves those. I'm sure i could have thought of that myself, but as I said I don't know much about bananas beyond peeling them!

my daughter?s favourite all time snack :

1 flour tortilla spread with loads of choc spread. I mashed up banana and a small handful of raisins. Roll up and enjoy. She would have them every day if I let her!

You can freeze bananas too. They go black and yucky looking but are absolutely lovely when brought back to life and mashed up into cakes or banana bread.

i saw a recipe online recently which was a bread and buitter pudding, but instead of dried fruit, put bananas in between the bread.

Banana crumble is lovely, I normally chuck in any other fruit that needs using ie: pears, plums or kiwis. (Because the bananas are quite sweet you don't need to add any extra sugar)

Also I could happily live on bananas and custard - simple but effective!

You can take the skins off, freeze them as they are. For a pudding you defrost slightly and mash or put in a food processor and you have banana icecream!

Made a yum banana cake last night - just butter, brown sugar, self-raising flour, roughly mashed bananas and a bit of maple syrup. had it with custard.

Also lovely sliced with natural yoghurt and honey, or cream and maple syrup.

Muffins.

I had exactly this problem at the weekend. I found this recipe (well, similar anyway) - dd2 (9mo) loves it. You can freeze it too.

Apple and banana breakfast
1 cup oat flakes
3 cup water
2 small apples, finely chopped
2 small banana, mashed
Add oatflakes to water or milk. Chop up apple finely and add to oats. Boil and stir for 4-5 minutes. Beat in one small mashed banana.

pkt of 5 flakes

slit bananas lengthways
stuff with a flake
wrap in foil and bake for short time

deeelicious! .........and so easy

the remaining flake has to be consumed when feeling most in need!!

Banana muffins - yum. They taste like cake but are actually quite healthy.
Nigella Lawson recipe in 'How to be a Domestic Goddess' or Annabel Karmel recipe are both yummy.

put a few tablespoons of butter and a few of sugar into a sauce pan.. heat on medium to low stirring constantly until sugar disolved add sliced banana stir then pour over icecream... devine

Thanks, all. I made banana bread - put in extra dried fruit to cut back on sugar (figured the dried fruit has a few more vits than plain sugar even if it's still quite bad for his teeth!) It went down a treat. Bit too bananay for me, but great for DS
