What have you found in your freezer that you used for dinner recently?

Today I found sausages I bought reduced before christmas, onions i had diced, mushrooms i had sliced and some jacket potatoes i had frozen....

the result?

Sausage casserole with jackets and it was scrummy

I should have gone out but it was cancelled so looked in the freezer and found some king prawns and made a red thai curry (even had half a packet of sugar snaps!).

I recently found salmon which I baked in the oven. Said Sept 17th on the expiry date so I thought it would be fine.

I think it was Sept 2007. Tasted absolutely foul

Went to a friends for supper and she had frozen some pancakes - we defrosted them and quickly reheated - served with cream and cherry liquor whipped up, a scattering of raspberries, some icing sugar and some defrosted cranberry sauce (thought it was rasberry sauce) got to say it was the best desert I'd had in a long time

Twims, they sound scrummy!! off for a rummage in my freezer . . . although it's shopping week so it's quite empty apart from loads of veggies for some reason I think

Used some slimy corriander (frozen on the advice of mumsnet!) to marinate pork to make kebabs. Tasted as good as fresh.

I love having a rummage in the freezer and finding things lol.

Found some chops i forgot about and am defrosting them for tomorrows dinner.

This evening I had a bit of soft cauliflower in the fridge which i sat in a bowl of cold water to return it to fresh and firm.

It was only a serving, but i was about to make a cheese sauce for it to give to DH as he loves cauliflower cheese.

Then i remembered two little pots of frozen cheese sauce from when DD used to like everything in cheese sauce.

Steamed cauli, defrosted sauce, grated a bit of nutmeg and a bit of cheese over the top.

Took me all of 2 mins and DH felt all special.

Have defrosted freezer in Kitchen and larger one in garage this weekend - timing not great I realise but it needed doing - and a hairdryer speeds up the hot water no end!

Anyway - because we've had to take lots of stuff out yesterday we ate homemade lasagna and Chocolate birthday cake (from DD 10th bdaylast year); today its been paella with chicken, prawns & peas (using up bits) and I've made a chicken and veg soup for tomorrow from bits of veg plus some fresh (1 £3 pack of chicken fillets did for both - to feed 4 both times) not bad?

Bolognese sauce, just enough for the kids, I added, sweetcorn, mushrooms, frozen spinach, served with spaghetti and grated cheese - was a hit!! I always freeze left overs for the days I can't be arsed and I do a nice "made up" dinner (as DS calls it)!

I found a gem- a small piece of mature cheddar (which I can't get here), just enough to make my quiche more tastier that just using Austrian cheese

Fish pie. Except it turns out it wasn't - it was shepherds pie! I was looking forward to it the whole 24hr defrost time.

LightShinesinthedarkness, cold water works for brocolli too! You'd be surprised at how limp it can be, needs a while in water, not just 10 mins.

Bodiddly , i didn't either but i did freeze them and they defrosted well so i warmed them in the oven and they were as good as new

I have a lucky dip dinner every Monday. (Busy night, so bung in the oven food!) I freeze a lot of left overs, but I have an inability to remember to label them, so I know they are main meals, but until they are fully defrosted, its not always obvious!

Last night, however, I had veg curry that DH made for bonfire night!

my elderly next door neighbour always crisped up lettuce or cauli in a bowl of water with a (washed) lump of coal in. not sure what the lump of coal was supposed to do, but it seemed to work.

I can't post on things I find in the freezer, because I have a list of freezer contents stuck on the side with a magnet, which I cross off, add to and double check on a regular basis!

I found a bag of parmesan that I grated and froze when it was starting to go hard. I remember I was cursing when my knuckles ached as I grated it, but it's been fab for risotto, fritatta and pasta so far (just a little bit left now ).
