I just got a Panasonic (can't remember the model but its the top of the line one with the nut dispenser).

This week I have made spelt bread, seeded spelt bread, white dough that I made into rolls (a bit doughy for me) and tomorow I will make granary bread.

So, what shall I try next? What works well? I am used to buying "artisan" type bread and I like it really dense.

I was also wondering about the pizza dough recipe. It is not clear from the book how many people it will feed - how big the bases will be?

the brioche recipe you get with the breadmaker is good!

Ivykaty44 · 19/01/2009 22:50

I have today made pizza dough in my machine (it is a long time since I have made this - probably 6 years!) and it was lovely.

I made the base and then I had a carton of sainsbury tomato and olives, comes in a box? So put half of that on and my dd put on swetcorn, mozzy cheese some frozen peppers and some cheddar. Cooked in the oven for 30 mins and it was lovely, so nice being fresh and ungreasy.

I did use half and half on the flour, wholemeal and white.

Tinight I made dinner rolls for the first time and they were good, it had water and then one egg, then the flour and yeast, sugar and salt - a little butter (the butter in the bread makes the crispy outer) put on dough and an hour later broke up the dough into 18 pieces and put on trays and left to rise.

then cooked for 30 mins - they are lovely, have froozen 6 and shall eat the rest in the next two ays for lunch.

How much did the pizza dough recipe make? I mean, how many pizza bases?

OP posts:
Ivykaty44 · 20/01/2009 18:43

2 pizza bases, I could get one pizza base on the baking sheet to fit in the oven so about 8-9in across.

Ivykaty44 · 20/01/2009 18:44

That was with 1ilb of flour

Kammy · 22/01/2009 17:49

Try the recipe in the Panasonic book with porridge oats and bran (or substitute oat bran).

50 g of each, 400 flour, 2 tablespoons olive oil, 1 tsp salt, 1 1/2 sugar, 1 tsp yeast.

Nice and dense.....perfect with soup!

oxocube · 22/01/2009 18:11

Ivykaty, 30 mins for pizza? Really? I bake mine in 10 in a v hot oven. Do you have any tricks I need to learn?

JumpingDizzy · 22/01/2009 18:14

The breadmaker's bible is good.

I tend to make pizza dough in mine or sometimes a loaf?

JumpingDizzy · 22/01/2009 18:15

breadmaker's bible

it's quite a big book.

ILikeToMoveItMoveIt · 22/01/2009 18:17

The spicy fruit loaf recipe in the book is DIVINE - especially toasted with lots of butter.

The 5 seeded bread is good too.

eeky · 23/01/2009 22:31

ooh can you post the spicy fruit loaf recipe sounds fabulous!

ILikeToMoveItMoveIt · 24/01/2009 15:10

Certainly

This is the recipe that came with my Panasonic, so it goes on the Bake Raisin 4 hour programme. If you don't have the seed and nut tray I guess you put the fruit in the main pan.

medium loaf:

1/2 tsp yeast
400g strong white flour
1tbsp sugar
15g butter
1 tbsp milk powder
1tsp salt
280ml water
2 tsp cinnamon
75g dried mixed fruit

Enjoy!

ProfYaffle · 24/01/2009 15:13

My current favourite is sesame bread. Use a normal white loaf recipe but use sesame oil instead of the usual oil and add 5tbsp of sesame seeds. It makes a really nice crisp crust.

Furball · 24/01/2009 15:45

Hope your dh isn't like mine - he went round this morning in ecomony mode and switched off most things, including the breadmaker which was halfway through a loaf! Shame he had to have stale bread for lunch

CuttySark · 24/01/2009 15:53

Walnut and capers added to a basic brown mix is lovely.

oxocube · 25/01/2009 11:04

Went mad with mine yesterday after reading this thread and made about 5 lots of different breads for the freezer. Have ciabatta in the machine now but not sure how it will turn out as made without the traditional 'starter'. Was fed up of the paddle sticking in the bread so have made everything on the dough cyle and then baked it in the oven bread or rolls. Delish!

eeky · 25/01/2009 21:19

thank you, will try making this tomorrow, hoping dd (9m)will like this for her brekkie. She is not keen on gloopy breakfasts and is a big fan of toast. Dh also likes making toast for her as it's easy!

nkf · 25/01/2009 21:21

I've just dug mine out but I've lost the recipe book. Are there any websites that have recipes that work for all types? With thanks in advance.

VinoEsmeralda · 25/01/2009 21:29

the hot cross buns, french stick and naan bread are all lovely.

Pizza dough- we make 2 large ones and 2 small ones from one batch (but we like our bases thin)

ILikeToMoveItMoveIt · 26/01/2009 08:29

NKF, what make machine have you got? Sometimes the makers website have the books on their website.

Ivykaty44 · 26/01/2009 08:34

ooo Hot Cross buns - anyone got a recipe, please for these cos want to try making some

VinoEsmeralda · 26/01/2009 12:18

enriched dough:

1/2 tsp yeast
250gr strong white flour
1 tsp sugar
25 gr butter
1 tbsp milk powder
1/2 tsp salt
1 medium sized egg
100 ml water
100 gr dried mixed fruit
1 tsp cinnamon
1/2 tsp mixed spice

Add last two ingrdients to the dough and the dried fruit in the nut dispenser.

Use basic rasin dough and once finished divide mixture into 8 balls, place ona greased baking tray and prove.

make a paste with 2 tbsp flour mixed with 2 tbsp water and pipe a cross over the buns. Bake gasmark 7 for 15-20 minutes

While still hot glaze with sugar glaze (40gr sugar dissloved in 4 tbsp water).

If using wholemeal flour add 140ml of water!

I normally just sprinkle sugar on the buns and then bake them but doesnt look as pretty..

Hope this helps

mysterymoniker · 26/01/2009 12:20

I'm hooked on those Wrights bread mixes

they just routinely come out well and are so quick - 1hour 55minutes

Ivykaty44 · 26/01/2009 13:28

thank you
