what do you put in stuffed peppers?

Just curious as I'm going to try & do some for us next week sometime but not sure what to put in them

mixed with chopped veg

or leftover risotto

i've got a great recipe for these but will have to post it later as i'm being slept on by DS at the moment if i can't be arsed with that, i just do chopped red onionn/chunks of feta/chopped olives/herbs+olive oil, or two quarters of a tomato in each pepper half with lots of chopped garlic and olive oil.

Bolognaise sauce but a very dry one and then top with cheese - can also put this in courgettes and aubergines.

Madame, that sounds tasty, I usually pop peppers in a spag bol anyways so that would make a nice change

Just make up your sauce and when it comes to adding the tinned tomatoes substitue for a big squirt of tomato puree.

It is one of my DDs fave meals - you can chuck frozn peas in the mix too and maybe sweetcorn (although I don't as hate sweetcorn) - anything really - use the inside of the aubergines and courgettes in your mixture too. No point in throwing that away.

Even stuff beef tomatoes with it.

Cook up mixed veg and pre-cooked rice (not too cooked or it will go mushy. Pop into the pepper and top with tons of cheese. Yum.

heh, being slept on is not all that - i'm stuck here with no food or drink and loathe to get up in case i wake him (teething, tired and grumpy)

I'd never thought about stuffing beef toms either, will give them a go as well.

I've done stuffed peppers with cous cous or rice and a spicey chicken stir fry before. Stuff them with it, then wrap in foil and put in the oven. Makes the peppers taste extra yummy

Fry an onion, chicken, mushroom, mixed peppers and some mixed veg. Add black pepper, chilli powder and dark soya sauce.

Stir in rice, it's better if it's a day old, or cous cous. Fill peppers with the mix and put in the oven.

batchelors savoury beef rice cooked and then stuff pepper with grated cheddar on top is gorgeous!!!

these are the best peppers ever...
cut your pepper in half lengthways
get a jar of pesto, red, or green doesn't matter. put a large spoonful in each half. then put in a couple of fat slices of fresh mozzarella and some pieces of fresh tomato.
those are the essential ingredients
you can also squeeze in, parma ham or salami, pinenuts,
splash some olive oil around, salt and pepper and put in the oven for 20-30 mins until they are nice and soft but crunchy on top.
serve with little potatoes (roasted) and salad.
really delicious and impressive looking.

Mmmmm that sounds gooooooood Ingles. Unfortunately dd1 is an "almost vegan" whatever one of those is and she doesn't "do" cheese.

Not strictly speaking 'stuffed', but I put in a slice of blue cheese/camembert/soft cheese, drizzle with olive oil. You can sprinkle some some chopped herbs for colour. I used to sprinkle crispy parma ham bits as well.

Gooey and delicious. Can eat it by itself.
