So many, many, many potatos.. what to do?

apart from spanish ommelette, baked etc..

seem to have discovered 5 kg of potatos whilst cleaning out the fridge

something interesting, that is a meal in itself ideas please !!

not what you asked for but something else until I find it.

onion and potato pie
serves 2
ready in 50 minutes

preheat oven to 200C. Peel and thinly slice 300g potatoes and one onion. Core, deseed and slice a red pepper. Slice 2 tomatoes. Layer in an ovenproof dish. Dissolve 1 veg stock cube in 200ml boiling water. Pour stock over the veg. Grate 25g mature cheedar cheese and sprinkle over the top. Bake for approx 35-40 minutes until the potatoes are cooked through.

Pommes Clarise.

serves 4-6.
1kg potatoes.
125g butter.
salt and freshly ground pepper.
freshly grated nutmeg.
650ml double cream.

Peel and slice potatoes to a thickness of a 10p piece. Wash well in several changes of cold water to remove the starch and pat dry.

Butter an ovenproof dishand put in a layer of potatoes. Season with salt, pepper and nutmeg and dot with butter. Continue to add layers of potatoes, seasoning and butter until the dish is half full, then pour on half the cream.
Continue the process, then pour over the rest of the cream. Put into a medium oven and cook for 1- 11/2 hours, depending on the heat of the oven.

Another varaition

Creamy potato bake
prep time - 15 mins
cooking time - 25mins
serves 4

500g potatoes
200ml double cream
100ml milk
1 clove garlic, crushed
salt and pepper
50g cheese, grated

preheat oven to 180C
Rinse potaotes, then pat them dry with kitchen paper.
place cream, milk and garlic in a large pan and bring to a gentle simmer. Add the potatoes, cover and simmer for 10 mins until tender. Season with salt and pepper. Transfer to a buttered ovenproof dish and sprinkle with cheese. Bake for 25 minutes until golden.

Still not find the one I had in mind in the beginning!

If I have too many potatoes I often make mash which I then freeze in small portion sized containers.
I find that it's a nice easy meal during the week to heat it up with some fish fingers or something and frozen veg! As quick as a ready meal but a bit better!

oh yeah - gratin/dauphinoise type are my fave dishes - slice pots, pour over milk/cream and bake in oven are great plus you can slice any other leftover veg like onions or leeks or carrots and put them in between the potatoes. Pep up with cheese, herbs or anything you fancy really. You could also mash a big load and make croquettes or fish cakes (or gnocchi if you feel adventurous!) all of which you can freeze if you make a big batch. Leek and potato soup also a winner. And pots make a good base for a simple curry (the simplest version involves buying a jar of premade curry sauce from the corner shop
