So many, many, many potatos.. what to do?

apart from spanish ommelette, baked etc..

seem to have discovered 5 kg of potatos whilst cleaning out the fridge

something interesting, that is a meal in itself ideas please !!

Tartiflette

Ingredients
50g unsalted butter, softened
175g bacon or pancetta, cut into 1cm lardons
250g cup mushrooms, sliced
1kg waxy potatoes, such as Cara, peeled and sliced to a 3mm thickness
Salt and freshly ground pepper
250g Reblochon cheese, cubed
568ml carton double cream

Method
Preheat the oven to 150°C/gas 2. With half the butter, grease a shallow baking dish, about 25 x 30cm.
Heat a frying pan over a medium-high heat. Add the bacon. Sauté for about 5 minutes until crisp and brown. Remove with a slotted spoon and drain on kitchen paper.
Pour off all but 1 tbsp of the bacon fat. Return the pan to the heat and add the mushrooms. Sauté for about 5 minutes. Season.
Toss the potato slices with salt and pepper. Arrange half in a layer in the dish. Sprinkle with the bacon and mushrooms. Top with half the cheese, season again (remember the bacon is salty already). Top with the remaining potatoes. Pour enough cream over the top to just cover the potatoes - you may not need it all. Dot with the remaining butter.
Bake for about 1¼ hours, or until the potatoes are tender. Dot with the remaining cheese, and return to the oven until brown and bubbling (about 15 minutes). Remove from the oven, cover with foil and leave for 10-15 minutes before serving

Nice with crusty bread and salad

Prawn croquettes are a favourite in this house

3 1/2 oz butter
4 oz plain flour
1 1/4 pints cold milk
salt and pepper
14 oz cooked peeled prawns, diced
2 teaspoons tomato puree
5 or 6 tablespoons fine breadcrumbs
2 large eggs, beaten
olive oil for deep-frying

Melt the butter in a medium saucepan and add the flour, stirring continuously. Allow the flour to cook in the butter for a couple of minutes, continuing to stir.

Start adding the cold milk little by little, stirring all the while until you have a thick, smooth sauce. Add the prawns, season well and stir in the tomato paste. Continue to cook for 7 or 8 minutes. The end result should be quite thick. Let the mixture cool completely - it is usually a good idea to leave it overnight.

Take a tablespoon of the mixture and form into a croqueta, a 1 1/2 - 2 inch cylinder. Roll the croqueta in the breadcrumbs, then coat in the beaten egg, then roll in the breadcrumbs again. Make sure the breadcrumbs are always dry to ensure an even coating.

Heat the oil for deep-frying in a large, heavy-based pan until a cube of bread turns golden brown in 20-30 seconds. Fry in batches of no more than 3 or 4 for about 5 minutes until golden brown. Remove with a slatted spoon, drain on kitchen paper and serve immediately.

Sorry ignore that last post I was thining about prawn cakes (obviously that croquette recipe does have potatoes although it is very yummy ).

littleducks-

peel and grate potatos, squeeze out excess liquid, then beat an egg and pour in, and add some plain flour , and mix it. it should be a damp but not wet mixture. heat oil and then drop flat ish dollops into the oil , turning until golden brown on both sides.

serve with sugar & cinnamon or apple sauce

leave some of the spuds to grow roots ( chit).. get a few trugs and plant them dead easy and ver satisfying and they pretty much look after themselves

all my food ideas have already been covered in above posts LOL

tablespoon at least. can be whatever size you like.
