Who BUYS white pepper then?? What's it for ?

I have only ever bought black peppercorns or occasionally those mixed ones when I'm doing a steak but I really wonder who buys only white?

Is it just people trapped in the 70's??

Ooh I'd love to know. The only time I ever see it is in 'caff' type cafes or chippies. It's so disappointing, too.

No it is good for mashed potatoes or seasoning any white foods/sauces/soups. It has a slightly different heat than black pepper. I use it quite regularly.

Its good for bloody marys. Black pepper is too peppery.

I love white pepper. I don't understand why it's so out of favour. There are certain things that I always use white pepper for. Much better than black for peppering a poached egg or adding to scrambled. Lovely in mashed potato. Actually, a lot of potato-based things benefit from it. Perfect in leek and potato soup, for example. Soups, sauces, turnip mash. Love it for seasoning veggie mince.

In fact I use it so often and so automatically that I'm struggling to actually think what I use it in. And I'm nobody's grandmother, fyi.

I use it in scrambled eggs, mashed potatoes, cheese sauce, on the yellow of a fried egg. I use more black pepper than white...but I like white.

ooh I love white pepper . I have it on my dinner every night and I have LOADS of it. God does that make me weird I didn't realise it was an old fashioned thing..maybe I should update my condiments!!

I use white pepper in cooking mashed potatoes, various soups and stocks, and other times when I want a milder pepper flavour and no black specks. We also use fresh ground black and mixed pepper.

When we have cabbage, I drain the pan, put in a knob of butter and lots of white pepper - black pepper just wouldn't be the same!

Shall try in mash next time.

There are some middle-eastern recipes that use white pepper.

I use it for morroccan chicken with preserved lemons and olives.

White pepper has a different aromatic quality doesn't it, it isn't a just low rent, boil in the bag, white sliced bread equivalent of black pepper. Essential ingredient in delicious clear, golden chicken soup (Jewish penecillin). YUM!

the official cheffy line is white pepper goes inot white sauces or things where black pepper would ruin the look.Also it has a slightly diff taste to black pepper-more refined.

I use it. It's just different - like red wine or white wine. Sometimes one suits better than the other. I was born in the 70s though.
