What'cha doin' for tea tonight peeps? I'm fed up with choosing what to have, spending ages preparing stuff only to find I throw it all away as dds don't like it.

Maybe we only post when we are having a good day hmc! Although actually I am doing more than I ever have done these days. Am going to have to give in soon and go for croquettes, quiche and beans!

Bozza I was kind of hoping that this may be the case, since previously I have comforted myself with the thought that I can't be the only mum who relies on processed food 40% of the time....

We are having corn on the cob for a starter (hark at me - we don't usually have a starter, lol) and Pad Thai (well moo's modified version of Pad Thai) for main. And I'm just making the choux pastry for the profiteroles.

Which course am I blatantly lying about?

we're having fahitas, not sure about dd as she's a bit under the weather, but no doubt she'll wanna try them! but hot hot hot, as they say!

Pad Thai

Cook enough thin egg noodles for 4 people. Mix together 2 tbsp Thai fish sauce, 2 tbsp, tom. puree, 1 tsp. caster sugar, 1 tsp white wine vinegar (should be rice wine to be authentic - but I don't bother).

Drain noodles. Put a bit of oil in a wok and fry up noodles, white cabbage (about a quarter of a large one), carrots (about 2 large ones) in matchsticks, and a small pack of fresh beansprouts. Oh and spring onions, sliced into long thin strips. Stir fry for about 5 mins. Add about half a pack of peeled prawns (defrosted if frozen). Add sauce, warm through thoroughly.

Serve with a scattering of bashed up salted peanuts and a few dried chilli flakes (optional for kids) We like soy sauce with it too.

I don't think it's very authentic - but we like it!

Home-made chicken tikka masala (sp?) with rice, popadums and home made naan bread and onion bhajis (sp again!!!?) If it tastes anything like our local Indian, I'll be amazed but I'm giving it a go anyway

Think we'll have some sort of 'spanish' omellette as have a glut of eggs in the fridge. Have loads of veg as well so can hide them all in it along with the potatoes and the kids don't realise amazing what they'll eat in an omellette! Me and dh can have a salad with it to make it more exciting.
Frizbe - ds1 (3) claims to love fajitas but just tends to eat the tortilla wraps!

I just make up about 16 balls and fry them quickly. Then out ina dish and add an onion to the pan (and a pepper if I ahve one) and then tinned toms, soy sauce worcester sauce and a bit of everything else in the cupboard and then add the meatballs back in and cook slowly for half hour or so.

meatballs - just roll mince with a bit onion and dried herbs and egg into a ball and heat under the grill for 5-10 mins. great with rice (as someone else said) and a bit of tinned tomatoes

and i am a crap cook

meatballs dead easy - made them yesterday. Easiest in food processor. Shove an onion in mixer and wizz till chopped, add raw mince, 1 egg 25 g breadcrumbc, salt, pepper and herbs or spices of choice to make it either Italiany or mexicany IYSWIM. Take out of mixer and roll into balls about the size of a golf ball. Fry until brown on outside then into pan, tip small glass wine, tin chopped toms and some stock or water and cook for about 20 mins on a low simmer. Dead easy
