Inventive ways with left-overs

Trying to save money, reduce waste and therefore save the world, I'd like some good ideas for using up left-overs. I try not to throw food away, but we can get tired of endless 'mixed veg soups' with a bit of everything in them. They all seem to taste the same. Anyone got good ideas for sour milk? (As you can see, I really don't like to throw anything away.)

I did mean milk that's gone off. Not green and evil though, just a bit yogurty. I like soda bread too - good idea

It is fine to use milk that has gone a bit yoghurty for soda bread, in fact it is better as the acidity helps activate the baking soda and it aerates it more afaik.

by left overs do you mean the little bits of veg left over in the fridge after you've used three wquarters of the packet in a meal or do you mean actual cooked left-overs?

Because if it's the latter I usually just eat it cold for lunch.

Instead of soup, why not chop all left over veg, cook as appropriate, mix then cover with cheese sauce and bake in the oven.

Left over chilli/bolognese sauce makes a great pizza topping. You don't need much, top with cheese.

Chop up left over roast dinner (meat/poultry/veg etc), mix with white sauce, stick pastry on the top for a lovely pie. Alternatively heat it up with curry sauce.

Cheese that's gone hard is lovely grated into scrambled eggs (cut off any mouldy bits).

OMBD you can also use it for muffins and banana bread, in fact if I don't have any gone off milk I add a bit of natural yoghurt or a squeeze of lemon to the milk.

Chop up any cooked veg (esp potatoes)
Fry
Add beaten eggs

Voila Spanish(ish) Omelette (mixed up languages - sorry)

My favourite at the mo is quiche. It's great for using up all those little bits that there isn't quite enough of to do anything with!
A bit like KatyMac's idea, except in a pastry case! And a little goes a long wasy, eg that one sad tomato in the back of the fridge, slice of bacon, a mushroom, wee bit of cheese, etc etc, mix with eggs and milk (although not sure if the sour milk would work on this occasion!) But pretty much anyrhing works for the filling.
I've also atarted making it in a bun/muffin tray so I get about 12 mini quiches, half of which are quickly scoffed by DP and then I freeze the rest.

how about blitzing it down in a food processor and making lasagne, CD?

or slicing it thin, adding taco beans and taco seasoning mix and stuffing it into wraps for a Mexican meal?

Leftover lamb - chop meat into smallish bits and fry with onion and peas. Put alternate layers of lamb mixture and thinly sliced potatoes into a baking dish. Pour over white sauce and top with cheese. Bake for 45 mins at 190C.

You can slice up the lamb, and put it in wraps with hommous, tomato, salad.... Or chop it up, lightly fry with some pine nuts and put it on hommous...

(slightly hommous-centric I'm afraid... )

I like leftover lamb in a cold salad with spiral pasta and peas dressed with mint sauce, but that's more of a warm weather thing. Very tasty, though

Not a life-changing suggestion but I mix leftover mash with some cheese, leftover meat or a bit of bacon, leftover veg or peas/sweetcorn from the freezer. Warm in microwave and then shape into people using a gingerbread man cutter. My children's favourite meal.

leftover pasta with tomato based sauce

mix a couple of eggs with a little milk and grate some cheese in

mix with cold pasta/sauce mix

add veg if you like

cook in thick bottomed frying pan into frittata-y thing, with more cheese on top (esp dolcelatte, mmmm) and grill to finish off
