I have made this Apple Traybake before and it is lovely warm with custard or cold.

i made lovely healthy flapjacks yesterday for dd to take to dancing as her snack.

i used this recipe and they went down a treat with the girls at dancing.

whats your carrot cake recipe? dd loves carrot cake but have never made that before.

I make SoupDragon's flapjacks - double recipe fills a traybake tin. They have condensed milk in them and without a doubt are the bestest, most indulgent flapjacks ever. I picked up the recipe on a thread which must be a year or so old now - will search, hold on...

Bill Granger's Peach and Raspberry Slice

Peach and Raspberry slice

185g (6.5 oz or 1.5 cups) plain (all purpose flour)
1.5 teaspons baking powder, plus an extra 0.5 teaspoon extra
125g (4.5oz) butter, chilled and diced
115g (4oz or 0.5 cup) soft brown sugar
115g (4oz or 0.5 cup) caster (superfine) sugar
3 ripe peaches, peeled and sliced into wedges
90g (3.25 oz or 0.75 cup) raspberries - fresh or frozen
2 teaspoons natural vanilla extract
1 egg, lightly beaten
185ml (6fl oz or 0.75 cup) milk

Preheat the oven to 180C (350F/Gas 4). Grease and line the base of a 20×30cm (8×12in) baking tray. Sift the flour and baking powder into a large bowl and then rub in the butter with your fingertips. Stir in both the sugars. Press half the mixture over the base of the tin. Lay the peaches over the top and sprinkle with raspberries.

Add the vanilla extract, extra baking powder, egg and milk to the rest of the base mixture and stir well - don?t worry too much about lumps. Pour evenly over the top of the peaches and raspberries and bake for 1 hour. Cool in the tray and then cut into squares to serve.

ohh that reaspberrry and chocolate one looks lovely. unfortunately i cant get mascarpone here i have tried before any one know of any subsitutes that i can use?

Yes, I'm sure it would (as long as you take them out of the tin and drain them first .

I've done it with apricots and rasps, so I'm sure there must be lots of different things you could try.

What depth of 'tray' do you need for a traybake?
A swiss roll tray? or will a lasagne pan do?

haha i found some! small town and small tesco but it has now been expanded. my raspberry thing is nearly cooked ill let you all know what it was like.

Id go for the lasagne dish.

I made the raspberry and white chocolate one regularly, it is delicious.

I also make ultimate fudgy rocky road brownie which freezes really well and is lovely warmed up with a scoop of icecream on top.

When I read the comments on the Good Food website many people who had made it said it needed longer in the oven than the recipe stated.

it took about ten minutes longer than it said. i just kept it in till it went golden on the top checking after 25 mins. i think it took about 35 mins all together and it was lovely. dd1 loved it but she had hers unset and ate it with a spoon because she couldnt wait.

I made a gorgeous plum cake the other day - did it in a deepish square tin so probably not strictly a tray bake but I'm sure it could be done like that.

Plum Cake (Nigel Slater)

150g butter
150g caster sugar
16 plums ? de-stoned and cut into quarters
3 large eggs ? beaten lightly
75g plain flour
1 1/2 teaspoons baking powder
100g ground almonds
50g shelled walnuts ? chopped

Set the oven to 180 C and grease and line and 20cm square tin.

Beat together the butter and sugar.
Add the eggs gradually.
Sift together the flour and baking powder and fold them in.
Fold in the ground almonds and walnuts.

Scrape mixture into tin and put the plums on top ? they will sink into the cake as it bakes.

Bake for 40-45 mins and test with a skewer. Remove cake from the oven and leave in tin for 15 mins before turning out.

Has anyone got a recipe that isn't too sweet and I can con my DH is healthy? Perhaps because his family is prone to diabetes he's very puritan about sugary things and was most disapproving when I made flapjacks. I soemtimes do muffins which don't have any added sugar but I really fancy an oaty trayback....please...
