Could I have some inspirational soup ideas please

Am getting quite good at cooking rather than relying on ready-made stuff. Trouble is that the only soup I've managed is a veggie one and lentil one off another thread.

Could someone give me some other ideas as my oh doesn't mind soup and a pud of some sort as an evening meal once a week & it's saving me a fortune making my own!

Actually, I have a Raymond Blanc soup recipe involving lettuce and courgettes and it really is nice!

Oh you have to try this red pepper and tomato soup - it is amazing and so easy:

Roast 5 red peppers (halved and deseeded)with olive oil and salt and pepper so that they're soft and have the teeniest bit of black stuff on the edges.

Blitz with 2 cloves raw garlic till quite smooth in the processor, then add 1 or two tins of plum tomatoes and process again till smooth.

Pour into pan and heat up, then serve. You could add butterbeans to this too.

I do a minestrone type one - onion, red, yellow and green pepper, courgette, tin of tomatoes and veggie stock, mixed herbs and pepper.

When it's all cooked, whizz it up and add some soup pasta and a tin of mixed beans and you have a very filling meal! (and it's free on a green day on Slimming World if you are into that )
Even my DH accepts it as a "proper" dinner

Roast pumpkin and vanilla.

Roast the pumpkin (butternut or one with really good flavour), puree it. Fry a shallot and a small garlic clove, add a really good ( homemade ) stock and a split vanilla pod ( keep the seeds ), add the puree. simmer for 10 mins or theres abouts. Push though a sieve add the vanilla seeds and some cream.

It is a deliate soup so don't go overboard with the seasoning. It is the best soup I have ever tasted.

Oh that sounds fantastic Anifrangipani, I will try it.
In fact this is an excellent thread. It should go in mumsnet food classics, if we had one. We should have one, shouldn't we. there are tons of fab food threads that get swallowed up.

Serve any soup with a chunk of interesting cheese.

Nibble it as you go along, with a good bread. A bit like having a glass of wine with the meal, adds variety and interest.

I agree with Carmenere, that does sound fab Anifrangipani! Am working on a monthly shopping list atm so will add ingredients to try it.

PeaMcLean, never tried cheese with soup, what would be good?

I agree with Carmenere - this is a great thread and I've added it to my watch list to make sure I make all the soups! In fact, I need to get my mum to join mumsnet just so she can try these recipes - she's a soupaholic too! I'm trying to make it three generations - just started doing a bit of BLW with DS and he loved drinking some of my tomato and courgette soup yesterday

A posher (but still pretty easy) soup that DH and I have made for friends is this one: Minted Courgette with Greek Yoghurt. Not really a wintery one though

that is the easiest soup in the world! it would be nice cold as it is reminiscent of gazpacho, DD and i have just made it together, it took minutes, once teh peppers were roasted. fab!

would you guess 6 cups to be about 2 pints or so dittany? cups seem like a strange way to measure but i might literally get mil's coffee cup out for that one since it's a cup n not a mug

Roasted Pumpkin soup

1 Pumpkin
1 Onion
2pint chicken stock

Chop pumpkin into about 8 slice season seeds removed with a little salt and pepper and a little oil.

Put in a hot oven gas 8 for 40min to and hour. Cooked when a little charred and soft when poked with a knife.

Fry a chopped onion in a little oil add chopped and peeled pumpkin and stock bring to the boil and simmer for about 30mins check seasoning then blend until smooth. Serve with a handful of grated cheese stirred in.

This a Delia recipe but she adds a garlic, but i found it over road the taste of the punpkin.

gazpacho is a chilled Spanish soup, made with tomatos, and you serve it with chopped peppers and cucumbers and you can serve it iced. really delish

am eating the red pepper and tomato soup right now with granary bread dipped in, it is delish!

Ali23 - dont know if you have found the Jamie recipe for Storecupboard Lentil Soup but here it is (sorry, a bit late for today!)

Here ya go... Storecupboard lentil soup

Makes enough for 4-6 and really filling.

6 rashers streaky bacon, chopped
2 red onions chopped
2 carrots chopped
2 sticks celery chopped
2 cloves garlic chopped
1/2 tsp dried thyme
1/2 tsp dried chilli flakes
200g lentils (red or green or mixed)
1 veg stock cube
1 410g tin cannellini beans (I have used haricot)
chopped flat leaf parsley

Fry bits of bacon in olive oil, when crispy add thyme, chilli, onion, carrot, celery and garlic.

Cook gently with lid on for 10-15 mins then add lentils and 1 ltr water or veg stock. Bring to boil & simmer till lentils are soft.

Add tin beans and, if too thick, add some more water. Simmer for 10 mins then season as required.

Put into bowls & sprinkle parsley over.
