Recipe Fruity chicken curry:
4 chicken breasts cubed
2 onions
2 tablespoons curry paste (I use pataks korma)
6 tbsp tomato puree
900ml chicken stock
1 cooking apple (peeled and thinly sliced)
1 large carrot (peeled and thinly sliced)
2 lemon slices
75g sultanas
1 bay leaf
1 dessertspoon brown sugar
Plain flour
Preheat oven to 180/gas 4
Fry onion in 2 tbsp veg oil for about 10 mins until lightly golden.
stir in curry paste and tomato puree and cook for 2-3 minutes.
Then stir in 2 tbsp of plain flour and 300 ml of stock.
Add sliced apple, carrot, lemon, sultanas, bay, sugar and rest of stock. Season
Put sauce in casserole dish and add cubed chicken. Cover and place in over for 1 hour. Remove lemon and bayleaf and serve.
Feeds 4 adults or probably 6-8 kids
