What shall I do with my sweet pots?
Any simple recipes please?

nice in a chicken casserole. when i was in nz they ate them just plain like our pots, or oven roasted with oil

Roast them....Cut them into wedges (don't peel...)put in a roasting tin with olive oil and put in oven...lovely!

Second roasted. They go all caramelised-y round the edges - yum!

Or mashed, but be careful - they cook REALLY fast and go like sweet potato soup if you're not careful!

Or diced and fried with onion, herbs, little bits of bacon and savoy cabbage.

or i also like to mash them and mix with butter and horseraddish.

or mix them with other root geg and roast them all together.

or boil them other things like swede, normal potatoes, parsnip and carrot and mash up with bitter and black pepper and maybe add mustard and/or horseraddish

peel them with a potato peeler and make sweet potato crisps

I love sweet potato chips, crisps etc. Roasted sweet potatoes are absolutely gorgeous.

I use them like normal potatoes on top of shepherds pie, taste really great with the sweet lamb. Also mash them up with parnsip and carrot instead of normal potatoes with a roast. Cut them into chips and serve with fish fingers etc - just roast them in olive oil for about half an hour.

Fry Onions
Grate cheese
Mash sweet potatoes
Mix and brown under the grill

roast/bake

But best as chips in a butty

Sweet potatoes
Garlic, onion, ginger and fresh coriander
Pork (mince/ chunks)
tin of tomatoes
Chillies
Green and red peppers if you like.
Kidney beans if you like.
Bit of lime juice if you've got it (but doesn't matter if you haven't)

Chuck it all in, serve with rice and more fresh coriander on top.

You can do the same things to sweet potato as you would with ordinary potato. My favourite is oven roasted in olive oil with a hint of cinnamon.

My favourite is to cut them up in wedges (quite big) and drizzle with chilli oil and roast. About 15 mins before ready, stick a couple of chicken breasts in too with some chilli flakes, lemon juice and oil and roast them too. Serve with green veg (battle to get my DH to eat veg - worse than a child!!!) and sour cream!! Really yum - in fact, might just nip to Sainsburys and stock up right now for tonight!!!

Nigellas potato and halloumi bake - normal potatoes cut up quite small and sweet potatoes cut up a bit bigger, green pepper chopped up, a red onion and some olive oil - bake for 45 mins, then put sliced halloumi on top and bake for another 10 until it melts....yummmmm!

Roasted sweet potatoes then mashed them and served with grated cheese and brocolli for lunch yesterday. DS (4) and DD (9mths) lapped it up although i thought it was a bit bland. But was wondering about the nutritional status of a sweet potato. Is it really starchy like an ordinary potato? Or is it more related to the root veg like squash etc?
