What is your "throw it together" recipe for when you can't be bothered to cook?

Mine is can of tomatoes, can of whatever beans I have in cupboard, whatever is in fridge (veggies/ham/chorizo etc) and some chilli. Good with cheese on top too.

For the children - rice noodles, soy beans, soy sauce, chilli flakes, dash of honey.

For all of us - pasta with red pesto and roasted vege; cous cous and chickpeas stuffed into peppers and baked.

For dp and I - asparagus roasted with balsamic vinegar and served with shaved parmesan and good bread; long red peppers stuffed with mashed feta, red onion and lemon juice and roasted; mattar paneer and bread.

soups-
red lentil and sweet potato, boil for ages, blend
tomato and veg, pack of frozen veg, two tins of tomato, boil for ages, blend
also great for baby food, serve with cheesy garlic bred and salad for grown ups

pasta and pesto (pesto from a jar, obviously!) with lots of parmesan, always been my favourite standby, nice a cheap and loved by 4 year old who probably eats it a about 3 times a week

Already trying it out on baby!!

Mine is:
cook spaghetti, drain, in same pan heat some olive oil, then add crushed garlic, bit of white wine, loads of lemon (and zest if you can be arsed), chilli flakes, then put spaghetti back in and add a tin of mackeral or sardines and mix up.
So delicious and I always seem to have ingredients and just about enough energy to make this even after a really long day.

That's if I really can't be bothered to cook. If it's a 'I don't want to cook much' type of day, then an ommelette, or scrambled eggs on toast.

Stir fry where I buy a bag of ready chopped up veg and beansprouts, noodles and whatever else I can bung in (bit of chicken/prawn etc) Jar of stir fry sauce.

Baked omelette/pastryless quiche:
Bung sliced rolls or English muffins into a buttered baking dish, throw on some chopped quick-cooking veg, chopped bacon/ham and grated cheese. Mix 5-8 eggs with milk, salt and pepper and pour over the lot. Bake around 30mins 180degrees til solid and golden brown.

Student pasta - lightly fry onion, mush, pepper (what's in fridge courgette, bacon or ham etc.) then add in pasata (sieved tomatoes) and spoon full of sugar. Continue cooking till pasta done.
Tuna & pesto pasta - tin of tuna, fried onion, mush & pepper,squeese of lemon, green pesto, plain yoghurt, sweetcorn all mixed into pasta
Has a proper italian name but basically slices of garlic lightly fried in olive oil along with those tiny dried chillis add cooked spagetti into pan and mix around with shavings of parmasan (I just use potatoe peeler). Careful not to eat chillis unless hard as nails.
Beany Spread - sautee chopped onion in loads of butter till glassy not brown, add chopped toms, cook for 2 mins then add a tin of mixed beans you've mashed first. (s&p)
Emergency frozen pizza (although no longer room in freezer due to multiple frozen baby puree & milk)
Baked beans on toast with fried egg.

Pea and Ham Soup- Fry a large onion in small amount of butter and olive oil. Add a small bag of frozen peas and (reduced salt) vegetable stock, simmer then wizz with a hand blender. Throw in left over ham diced up really small -or leave out for a veggie option (still yummy).

Lovely with wholemeal toast on the side.

For the children, it used to be Cheesy Peasy Pasta.

Cook pasta (bunging in a few peas at the end), grate cheese, cut little pieces of ham. Mix it all together till cheese is melted. Eat

Pasta. Throw some small bits of broccoli in a few minutes before the end. Drain and stir in herby/garlicy soft cheese and a few bits of smoked salmon. So easy, my two year old loves it, and it feels like luxury.

Feeling very embarrassed because some of your non-cook meals are better than my 'proper efforts'.

We live on pesto pasta, ready-cooked chicken with crusty bread & caesar salad, pizza & salad, fishfinger sandwiches, chesse & beans on toast, etc.

Mind you, we're all looking good on it

Tuono e lampi (I apologise for my rubbish Italian - it means thunder and lightning). Cook pasta, drain and put back in pan with olive oil and garlic. Add cooked chickpeas, season and serve with parmesan. Takes about 10 mins an is yum (and cheap!)
