Good Chocolate Muffin receipie needed please

I want to make those American style large muffins but the receipes I've found in my books are basically for cakes not muffins - what I would call cup-cakes. Can anyone help.

What's the difference, taste-wise? I tried making Nigella's banananana muffins out of Domestic Goddess (actually out of Batters' DG, which she has reclaimed in drive for half-term goddessery) and they were a bit leathery.

I think it's the texture. Are muffins lighter? I've heard bad reports about Nigellas bananana ones.

Top tip is not to over stir them when you mix the wet ingredients into the dry.

OK (recipe from Susan Reimer book)

9oz (255g) plain flour plus 2 tsp baking powder (or use self raising and NO baking powder)
Half tsp bicarbonate of soda
Half tsp salt
4 - 6oz fine white granulated sugar (I use 6 )
3 -5 tbsp unsweetened cocoa powder (I use Green & Black's organic)
Plain chocolate chips (optional but yummy)

Mix all that in a bowl

In another bowl
An egg beaten
Tsp Vanilla Essence (use good vanilla essence, it makes a difference IMHO)
3 fl oz (90ml) vegetable oil (or can use same of melted butter)

Mix the wet ingredients together

Than add the wet ingredients to the dry ingredients, stir to mix (try not to overstir)

Fill muffin cases 3/4 full and bake for 20 - 25 minutes at Gas mark 5 -6, or 374 - 400 F or 190 to 200 C

I put oven on before I start preparing to make sure its good and hot and they take 20 mins

I think that's something to do with either leaving them in the tin to cool or taking them out to cool on the rack and I can't remember which is correct!

Wow twiglet thanks a tonne! They're for my kids brekkie (a special treat). The only thing is that in my eagerness I forgot... I don't have a muffin tin thingy. Will get one at weekend and then try your receipe - thanks

Arrgghhh .. CHOCOLATE MUFFINS >. I missed out the milk in the wet ingredients .. you need to add 8 - 9fl oz milk ... sorry

Savoury Cheese Muffins

3oz grated cheddar cheese or other

Mix all that in a bowl

In another bowl
An egg beaten
8 fl oz (240ml) milk
3 fl oz (90ml) vegetable oil (or can use same of melted butter)

Mix the wet ingredients together

Than add the wet ingredients to the dry ingredients, stir to mix (try not to overstir)

Fill muffin cases 3/4 full

Optional .. sprinkle top with extra cheese or sesame seeds

and bake for 20 - 25 minutes at Gas mark 5 -6, or 374 - 400 F or 190 to 200 C

Well tonights the night - Got the muffin tray and will be doing them tonight! Thanks for those Twiglett. You don't by any chance have ones for Apple and or summer fruit do you?

I will type up the spiced apple ones if you really want me to though but you'll have to wait till my RSI is under control
