Most underrated foods? Basic or fancy.

I love reading about the history of food and recipes and how we ended up eating what we do. Along the way some foods have become commonplace and some are sought after and celebrated (mostly because expensive).

I am here to celebrate the pea. That pretty and delicate little green ball that I can’t believe comes in giant bags for £1.50. How is it so cheap? Why don’t people appreciate it? A dish of peas with butter and mint is divine. They are so delicious and delicate and pretty. Did people appreciate them properly when they had to remove them from their pods and could only eat them fresh for a couple of weeks?

Other things that absolutely punch are sesame oil, sumac, balsamic vinegar. Why are they not more expensive?!

Try refrigerating pickled onions the gold star chip shop style ones.
It seems to intensify that sharp vinegary goodness.

Putting them in the fridge right now..

M&s have a large jar at the mo for around £3 and I am eating them like grapes. They're absolutely amazing.

Cabbage. It is so versatile and healthy. Yet it's for most pretty "meh" veg

And it lasts for weeks in the fridge.

Toasted unsalted cashews

Deglet Noor dates (has to be the ones from Grape Tree)

Home grown runner beans

Malt vinegar on vegetables - always

Homemade soup 🥣
Eggs - so many options. I prefer poached and scrambled eggs but make egg mayo, omelette, boiled, coddled, frittata and French toast. Also use them for cakes and meringues.🥚
