Help! Need dairy-free dessert ideas for tomorrow lunch

Have an unexpected guest joining us for lunch tomorrow and they're dairy free. All I have to offer is fruit ☹️

I do have some single oat cream in the fridge, plus usual store cupboard ingredients. Can anyone help please?

You can use stork margarine for a sponge cake. How is cream dairy free?

If you serve it on the side, the dairy free person doesn't have to pour it on theirs!

My emergency vegan and non dairy pudding from store cupboard ingredients:

  • one 250ml soya cream (Alpro)
  • one bar dark chocolate (Green and Blacks cherry or orange is nice).
  • optional brandy or liqueur, to match flavour of chocolate

Melt chocolate, pour in soya cream, pour into two little pots and refrigerate. Serves two.

Nigella Lawson’s olive oil chocolate mousse is dairy free and delicious, but maybe a bit rich for hot weather.

Summer pudding is ideal for hot weather, it’s a few minutes cooking the fruit then it’s left to cool and soak into the bread.

Sorbet or granita is amazing in the heat and so easy.

A bag of frozen raspberries, some icing sugar and a slosh of Cointreau. Simmer the berries with enough sugar to taste sweet (it will taste less sweet once it's cold). Whizz it in a blender, add a slug of Cointreau and pour into a tub to freeze.

Just to update:

I heated the single oat cream and melted dark chocolate into it, put it in the fridge to set. It was a little grainy but tasted ok. We also had melon and raspberries so I think it all turned out well. Will definitely stock up on non dairy stuff just in case!

I’m dairy intolerant and another family member has coeliacs, another is allergic to eggs. Our go to dessert is fruit crumble made with stork and gluten free flour. We make custard with oat milk. I especially like blackberry and apple crumble.

Silken tofu is a fantastic base for loads of things. M&S do it, plus other places. It’s a staple. You can Google for ideas, but it’s basically a creamy texture that takes on the flavour of whatever you use with it, so sweet or savoury. It’s cheap but you only get it in small packets though it’s possible to buy in bulk.

There are so many ways to add flavour to silken tofu to make a dessert, but basically you need a main flavour and bulker, an added flavour for nuances and a sweetener

So, fruit such as raspberries, blackberries, stewed apples, passion fruit,
Added flavour could be squeezed orange juice, sherry, vanilla essence
sweeteners could be different sugars, such as rapadura, cane sugar, maple syrup

For chocolate desserts, I’d use cocoa powder with melted vegan chocolate

Original Biscoff biscuits, vegan digestives or ginger biscuits could make a base

Also Alpro vanilla yoghurt is a useful standby for a cold, custard type accompaniment

You can buy vegan food magazines or read online from your local library

@ChoccyHobknob That recipe looks fantastic! What brand do you use for the tins of coconut cream? I think the rest is all stuff I’ve used before, but I’ve only ever had the blocks of creamed coconut or coconut milk.

This Gordon Ramsay avocado chocolate mousse is good if anyone is looking for dairy free recipes in the future. Does contain honey, so if necessary to make it vegan you can use maple or golden syrup instead

Yes, Jus-rol is vegan but I meant getting a strudel from the freezer section of the supermarket tbh. I really like them and all of the ones from my local supermarkets were vegan. Then served with Swedish glacé ice cream or oat cream.

Next time you are in m&s buy the chocolate orange torte. It's in the normal freezer section and marked vegan. It's a chocolate delish treat for everyone. I always have one on standby in the freezer.

I'd also recommend Swedish Glace and Booja Booja ice cream
I've used lots of dairy-free recipes from this site - a lot are straightforward and I've never had one fail. I'd go for spiced pears with vanilla Swedish Glace

Strawberry Chua Pudding Might be too late for today but my go to for dairy free is blitzed strawberries with a spoonful if chia seeds mixed in. Refrigerate dir a couple of hours and if you need to make it more fancy grate some vegan choc on top or my dairy free grandsons favourite us to serve it with vegan chocolate buttons
