Does anyone have any quick and simple recipes without huge amounts of ingredients that you would have in the week on a busy night? I'm really struggling and looking for any inspiration!

Beans on toast and baked potatoes are my favourite quick eats. Pasta and a homemade tomato sauce, with chickpeas for protein is pleasant. Sauce is easy- fry onions and garlic, add any veg you have in, add herbs and stock cube, then tinned chopped tomatoes (good ones). Simmer for 10 minutes.

Ratatouille is nice and once chopping is done just leave to cook. You can then add shell pasta and cheese sauce and bake for a pasta bake.

Quinoa or some sort of grain, or pasta, with a can of butter beans or cannelloni beans stirred through. Shove in a handful of frozen spinach or broccoli, then add a spoonful of pesto or tahini. Sprinkle with feta, chopped brie, wherever cheese you like. A bit of sciracha sauce maybe. This is my go-to easy dinner, endlessly variable with different beans, adding tinned sweetcorn, black olives, etc .

Frozen spinach is great to keep because it doesn't go off and you can just add a handful but fresh would be good too.

There is a fabulous truffle and artichoke pesto by Belazu that Sainsbury's stock. Makes a change from the normal pesto.

We have chickpea and spinach curry about once a week. Very easy and quick and the children will eat it.

Scrambled eggs on toast, with cheese added and or any bits of veg eg spring onions, peppers, mushrooms, that you have knocking around if you have the time to fry them.

Roast veg (tomato, red pepper, onion, courgette), topped with halloumi and with a green pesto drizzle. If I want it quicker I buy a tray of prechopped veg.

Stir fry is even quicker if you buy those boxes of chopped veggies, but more plastic and less cost efficient! We tend to alternate.

Filled tortellini - and in a pan fry halved Cherry tomatoes, crushed garlic and add a whole bag of spinach. Add the drained tortellini to the pan and grate Parmesan over.

Roast veg and gnocchi - edited to add, this is ONLY quick if you do the roast veg in advance. I sometimes make a load at the weekend and bung it in the fridge in a box - it keeps really well. Then put in an oven tray to warm through and add the cooked gnocchi and maybe stir in some harissa.

This is a really nice frozen mix from Sainsbury’s that you can stir fry straight from frozen and crumble feta into if you want, or just as it comes. I add sriracha drizzled over. https://www.sainsburys.co.uk/gol-ui/product/sainsburys-greens-grains-mix-taste-the-difference-600g

Mixed bean and lentil chilli is oir favourite.
Prep takes seconds but I use the slow cooker for it mainly.
Takes about 20 mins in my instant pot though

Boursin pasta. Only takes as long as cooking the pasta and only uses one pan (but you obviously need to have Boursin available!).

Any pasta shape in boiling water. Cook for 5 mins then add small pieces of broccoli, green beans or peas (or a combination) for another 5 mins or until pasta is cooked. Drain but reserve a good amount of the pasta water. Add Boursin and cook on low heat until melted, adding enough water to loosen sauce. Serve and enjoy!

This is on repeat in our house, usually add a bit more cumin and a few chilli flakes. It’s very tasty, vegan (without the yoghurt or with Soya yoghurt) and gluten free (I sometimes make GF flatbreads to go with it, or toast some frozen GF pittas)

I made this tonight and it was great! I saw it on Instagram (dinnerwithdafni) and just swapped the chicken for Quorn and used veg stock to make it veggie. Enjoyed by 3 year old and 10 month old!

Easy Chinese Chicken Curry

Chicken:
To make the chicken coat 2-3 chicken breast chopped in thin chunks in 2 tsp of cornflour and a sprinkle of white pepper.

Then you need:
1 onion chopped chunky
1 pepper chopped chunky
1-2 garlic clove sliced
200ml chicken stock
200ml coconut milk
Handful of peas

Spices:
2 tsp curry powder, 1 tsp chinese 5 spice, 1/2 tsp tumeric

Add some oil to a pan, the add chicken, garlic, onions, peppers and spices for a few minutes. The add stock and coconut milk and simmer for 10 mins. Just before the end add the peas and serve once cooked. Serve with egg fried rice.

We actually had a good one today, tin of lentils mixed with some chopped salad veg and a lemon/garlic dressing, served it with some panfried halloumi and fancy bread

I love an “anything goes” stir fry, it always includes fresh garlic and ginger but then I throw in “whatever”. Sometimes just edamame beans, broccoli and noodles with a slug of soy sauce and sweet chilli sauce.

On a similar vein: recently I bought a lye dragon Ramen sauce jar - you just mix it with boiling water, toss in some udon noodles, extra ginger and then some veg (I use a sliced up carrot, spring onion, broccoli, frozen peas).

Absolute perfection.
